งานวิจัยนี้มีวัตถุประสงค์ เพื่อศึกษาปัจจัยที่มีผลต่อกระบวนการหมักส้มฟัก โดยใช้ Pediococcus sp. เป็นหัวเชื้อเริ่มต้นในการหมักส้มฟัก มีการเติม มอลโตส ซอลบิทอล และไซบิทอล เป็นสารพรีไบโอติกผสมในการหมัก ทำการทดลองโดยนำปลาปึ่งปลาน้ำจืดที่หาได้ง่ายในท้องตลาดผสมกับ เกลือ กระเทียม ข้าวเหนียวนึ่ง หมักในอุณหภูมิห้องเป็นเวลา 24 ชั่วโมง แบ่งชุดการทดลองออกเป็น 4 ชุดการทดลอง คือ ชุดที่ 1 เติมเชื้อ Pediococcus sp. ชุดที่ 2 เติมเชื้อ Pediococcus sp. และมอลโตส ชุดที่ 3 เติมเชื้อ Pediococcus sp. และซอลบิทอล ชุดที่ 4 เติมเชื้อ Pediococcus sp. และไซลิทอล นำทั้ง 4 ชุดการทดลองซึ่งอยู่ในระหว่างการดำเนินงานไปตรวจวัด pH ตรวจวัดปริมาณกรดแลกติก ตรวจปริมาณเชื้อแบคทีเรียแลกติก และตรวจสันฐานวิทยาของแบคทีเรียแลกติกที่ขึ้นบนอาหาร MRS agar + 0.1% CaCO3 ในงานวิจัยครั้งนี้คาดหวังว่าการใช้เชื้อ Pediococcus sp.เป็นหัวเชื้อเริ่มต้นและการเติมส่รพรีไบโอติกจะทำให้กระบวนการหมักส้มฟักเกิดผลดีกว่าการหมักส้มฟักแบบธรรมชาติและสามารถนำไประยุกต์ใช้ในระดับอุตสาหกรรมอาหารต่อไปได้
