การศึกษาในครั้งนี้มีวัตถุประสงค์เพื่อศึกษาต้นทุนและผลตอบแทนของการผลิตไวน์สับปะรด โดยใช้วิธีการวิเคราะห์ต้นทุนและผลตอบแทน โดยการสัมภาษณ์ผู้ควบคุมการผลิตไวน์จากสถาบันวิจัยเทคโนโลยีการเกษตร มหาวิทยาลัยเทคโนโลยีราชมงคลล้านนา ลำปาง เพื่อนำมาจัดทำประมาณการงบดุล งบกำไร ขาดทุน และงบกระแสเงินสด และทำการวิเคราะห์ต้นทุนและผลตอบแทน
ผลการศึกษา พบว่า การผลิตไวน์สับปะรดต้องใช้เงินลงทุนทั้งสิ้น 430,685.50 บาท ซึ่งมีเงินลงทุนของส่วนของเจ้าของเอง 430,685.50 บาท โดยแยกเป็น 3 ส่วนคือ การลงทุนเริ่มแรก 278,060.00 บาท ต้นทุนการผลิต 70,338.20 บาท ค่าใช้จ่ายในการขายและบริการ 82,287.50 บาท ต้นทุนในการผลิตต่อหน่วยเท่ากับ 38.82 บาท รวมต้นทุนการทำไวน์สับปะรดต่อหน่วยเท่ากับ 237.69 บาท สำหรับการวิเคราะห์ผลตอบแทน พบว่า ระยะเวลาในการคืนทุน 4 ปี 25 เดือน โดยใช้อัตราส่วนลดเท่ากับ 8 เปอร์เซนต์ต่อปี มีมูลค่าปัจจุบันสุทธิ (NPV) เท่ากับ 905,467.97 บาท อัตราส่วนผลตอบแทนภายใน (IRR) เท่ากับ 49.17 เปอร์เซนต์ต่อปี แสดงว่า การทำไวน์สับปะรดใช้ระยะเวลาในการคืนทุนเร็วและให้ผลตอบแทนที่คุ้มค่าในการลงทุน สังเกตได้จากการวิเคราะห์มูลค่าปัจจุบันสุทธิที่มีค่ามากกว่าเงินลงทุนทั้งหมด รวมทั้งอัตราผลตอบแทนภายในมีค่ามากกว่าอัตราดอกเบี้ยเงินกู้ ดังนั้นการทำไวน์สับปะรดจึงเหมาะสมที่จะลงทุน
