การจัดทำโครงงานชิ้นนี้ เป็นการศึกษาเกี่ยวกับผลไม้พื้นบ้านที่สามารถนำมาแปรรูปและพัฒนาเป็นเครื่องดื่มเพื่อจำหน่ายให้ผู้บริโภคและเป็นแนวทางให้ชาวบ้านหรือคนอื่นๆได้มีผลผลิตและมีรายได้เสริมเพิ่มขึ้น
ในปัจจุบันเราจึงมีการนำฟักข้าวมาพัฒนาเป็นผลิตภัณฑ์ไวน์ฟักข้าวเพื่อทำให้รสชาติของฟักข้าวเป็นที่ยอมรับของผู้บริโภค และสามารถรับประทานได้ง่ายขึ้นเป็นประโยชน์แก่ผู้บริโภค โดยไวน์ฟักข้าวที่เราจะผลิตขึ้นนี้จะเป็นไวน์ที่มีแอลกอฮอล์ต่ำให้เหมาะแก่การรับประทานเพื่อสุขภาพ และไม่เป็นอันตรายต่อสุขภาพ
