การศึกษาครั้งนี้มีวัตถุประสงค์เพื่อการประยุกต์ใช้สารให้ความหวานในผลิตภัณฑ์ฟิลลิ่งขนุน โดยการทดสอบชิมจำนวน 30 คน ทำการทดสอบคุณลักษณะทางประสาทสัมผัสด้วยวิธี 9-Point Hedonic Scale พบว่าผู้ทดสอบชิมให้การยอมรับ สารให้ความหวานในผลิตภัณฑ์ฟิลลิ่งขนุนที่ 3 มากที่สุด ซึ่งมี่ส่วนผสมดังนี้ มีส่วนประกอบดังนี้ ขนุนปั่นละเอียด 200 กรัม กลูโคสไซรัป 50 กรัม น้ำเปล่า 50 กรัม แป้งกวนไส้ 20 กรัม แล้วทำการทดสอบคุณภาพทางประสาทสัมผัสด้วยวิธี 9-Point Hedonic Scaleกับผู้ทดสอบชิมจำนวน 30 คน โดย 1 คะแนน หมายถึง ไม่ชอบมากที่สุด และ 9 คะแนน หมายถึง ชอบมากที่สุด วิเคราะห์ความแตกต่างทางสถิติโดยใช้ตาราง ANOVA ทดสอบความแตกต่างของค่าเฉลี่ย โดยวิธี LSD (The Least Significant Difference) เพื่อคัดเลือกสูตรที่ได้รับการยอมรับมากที่สุดเป็นสูตรสำเร็จศึกษาการยอมรับจากผู้บริโภคโดยการทดสอบคุณภาพทางประสาทสัมผัส* ด้านสี กลิ่น รสชาติ เนื้อสัมผัส และความชอบรวม เพื่อหาสูตรที่ดีที่สุด พบว่าสารให้ความหวานในผลิตภัณฑ์ฟิลลิ่งขนุนโดยใช้กลูโคสไซรัป มีการยอมรับมากที่สุด
