วัตถุประสงค์เพื่อศึกษาประสิทธิภาพสา

วัตถุประสงค์เพื่อศึกษาประสิทธิภาพสารสกัดสมุนไพรเพื่อชะลอการเน่าเสียของมะเขือเทศ ทำการทดลองโดยสกัดสารจากสมุนไพร 3 ชนิด ได้แก่ ใบพลู ชะพลู และขมิ้นชัน โดยวิธีการกลั่นอย่างง่ายแล้วนำสารสกัดแต่ละชนิดปริมาตร 30 มิลลิลิตร ไปฉีดพ่นในมะเขือเทศ 600 กรัม ให้ทั่วจากนั้นแบ่งมะเขือเทศใส่ในขวดรูปชมพู่ 3 ขวด ขวดละ 200 กรัม และชุดควบคุมเป็นมะเขือเทศ 200 กรัมที่ไม่ฉีดพ่นสารสกัดจากสมุนไพร ปิดปากขวดให้สนิท ทิ้งไว้เป็นเวลา 1 สัปดาห์ ตรวจสอบการเน่าเสียของมะเขือเทศทั้ง 4 ชุดการทดลองโดยสังเกตจากสีผิว รูปร่างจุดดำเน่าเสีย (การบวม) ชั่งน้ำหนัก และหาค่า pH โดยใช้ pH มิเตอร์ (pH 211) ผลการทดลองพบว่ามะเขือเทศที่ฉีดพ่นสารสกัดใบพลูมีผิวเป็นสีแดงชมพู ลักษณะรูปร่างไม่มีการบวม ไม่มีจุดดำที่เน่าเสีย น้ำหนักเฉลี่ย 184.05 กรัม และหาค่า pH เฉลี่ยได้ 5.83 มะเขือเทศที่ฉีดพ่นสารสกัดชะพลูมีผิวเป็นสีแดง ลักษณะรูปร่างบวมเล็กน้อย มีจุดดำที่เน่าเสียเล็กน้อย น้ำหนักเฉลี่ย 165.95 กรัม และหาค่า pH เฉลี่ยได้ 5.55 มะเขือเทศที่ฉีดพ่นสารสกัดขมิ้นชันมีผิวเป็นสีแดง ลักษณะรูปร่างบวมเล็กน้อย มีจุดดำที่เน่าเสียเล็กน้อย น้ำหนักเฉลี่ย 163.87 กรัม และหาค่า pH เฉลี่ยได้ 5.45 และชุดควบคุมมีผิวเป็นสีแดงเข้ม ลักษณะรูปร่างบวมมาก มีจุดดำที่เน่าเสียมาก ชั่งน้ำหนักเฉลี่ย 151.95 และหาค่า pH เฉลี่ยได้ 4.03

จากการทดลองสรุปได้ว่าสารสกัดใบพลูมีประสิทธิภาพชะลอการเน่าเสียของมะเขือเทศได้ดีที่สุด
