products and a decisive factor for the consumer acceptance
of the product. The color values (L*, a* and b*) of
tomato dried in solar dried or under sun are shown in Fig. 4.
Redness is an important color appearance for the dried tomato,
as the quality and appearance of the dried tomatoes is
judged by the redness of the dried tomato. The vibrant red
color of tomatoes is due to the presence of the carteniod,
lycopene. Beta-carotene may also contribute to the colour
profile, particularly in the case of immature tomatoes. Results
showed that the samples dried under sun displayed higher a*
