บทคัดย่อ

โครงงานพิเศษนี้ได้ทำการศึกษาเครื่องดื่มเกลือแร่จากชะคราม มีวัตถุประสงค์เพื่อศึกษาปริมาณชะครามที่เหมาะสมในการทำเกลือและศึกษาสูตรเครื่องดื่มเกลือแร่พร้อมดื่มจากชะคราม ในด้านปริมาณเกลือที่เกี่ยวข้องในสูตรที่เหมาะสมเท่ากับ 302.667±0.763 ค่าความชื้นมีค่าความชื้นเท่ากับ 1.680±0.704 มีค่าสีความสว่างเท่ากับ 38.396±0.738 ค่าสีแดง (a*) เท่ากับ 3.870±0.101และ ค่าสีเหลือง (b*) เท่ากับ11.633±0.195 และปริมาณสารประกอบฟีนอลิกเท่ากับ 27.058±0.011 (mgGAE/100mL) จากนั้นนำสูตรเกลือที่เหมาะสมไปผลิตเป็นเครื่องดื่มเกลือแร่จากชะคราม นำไปวิเคราะห์คุณภาพทางกายภาพ พบว่า ค่าสี มีความสว่าง (*L) เท่ากับ 56.254±13.502 ค่าสีแดง (a*) เท่ากับ -1.104±0.277และ ค่าสีเหลือง (b*) เท่ากับ -1.758±1.707 ปริมาณสารประกอบฟีนอลิกเท่ากับ 290.570±10.786 (mgGAE/100mL) และคุณภาพทางจุลินทรีย์พบว่าไม่พบปริมาณเชื้อจุลินทรีย์โคลิฟอร์มและอีโคไล ซึ่งไม่เกินกำหนดของมาตรฐานกระทรวงสาธารณสุข (ฉบับที่ 195) พ.ศ.2543 เรื่อง เครื่องดื่มเกลือแร่ที่ได้กำหนดไว้
