บทคัดย่อ
เบอร์รี เป็นผลไม้ชนิดลูกกลมหรือผลประกอบ (Aggregate fruit) ที่เกิดขึ้นจากดอกที่มีเกสรตัวเมียและรังไข่หลายอันรวมอยู่บนฐานดอกเดียวกัน ผลสดมีเมล็ดหลายเมล็ด เนื้อผลอ่อนนุ่มและฉ่ำน้ำ ได้แก่ สตรอเบอร์รี บลูเบอร์รี ราสเบอร์รี แบล็คเบอร์รี และบิลเบอร์รี เป็นต้น นอกจากให้คุณค่าทางโภชนาการแล้วยังพบสารออกฤทธิ์ทางชีวภาพที่มีความสำคัญต่อสุขภาพของผู้บริโภค เช่น สารประกอบฟีนอลิกฟลาโวนอยด์ และแอนโทไซยานิน เป็นต้น ซึ่งสารดังกล่าวมีความสำคัญในการป้องกันปฏิกิริยาออกซิเดชันของไขมันในระดับเซลล์ ช่วยให้ทุกขั้นตอนในวัฏจักรเซลล์ทำงานปกติ ยับยั้งเอนไซม์ที่ทำให้เกิดออกซิเดชัน การเหนี่ยวนำให้เกิดเอนไซม์ที่ไม่ทำให้เกิดการออกซิเดชัน การสื่อสารระหว่างเซลล์ การกำจัดอนุมูลอิสระ และการปรับการถ่ายโอนเชิงสัญญาณ จากการศึกษาคุณสมบัติเชิงหน้าที่ของสารออกฤทธิ์ทางชีวภาพของผลไม้ในตระกูลเบอร์รี่ 8 ชนิด ได้แก่ บิลเบอร์รี แบล็คเบอร์รี บลูเบอร์รี แครนเบอร์รี ลินโกนเบอร์รี ราสเบอร์รี เรดเคอร์แรนท์ และ สตรอเบอร์รี วิเคราะห์หาปริมาณสารประกอบฟีนอลิกฟลาโวนอยด์ และแอนโทไซยานิน โดยใช้ High Performance Liquid Chromatography (HPLC) พบว่า สารแอนโทไซยานินหลักในผลไม้ตระกูลเบอร์รี คือ cyanidin-3-glucoside, cyanidin-3-galactosideและ cyanidin-3-arabinosideโดยเรดคาร์แรนท์ ให้สารประกอบฟีนอลิกสูงสุด 1,400 มิลลิกรัมต่อกรัมน้ำหนักสด ในขณะที่บลูเบอร์รีให้แอนโทไซยานินสูงสุด 495 มิลลิกรัมต่อกรัมน้ำหนักสด นอกจากนั้นมีการนำสารออกฤทธิ์ทางชีวภาพมาประยุกต์ใช้ในอุตสาหกรรมอาหารและยาด้านโภชนเภสัช โดยนำกรดเอลลาจิกที่สกัดได้จากผลราสเบอร์รี มาใช้ยับยั้งการเจริญของเซลล์มะเร็งและพัฒนาเป็นเวชสำอางได้อีกด้วย
