ปัจจุบันอาหารประเภททอดเป็ นอาหารประเภทหนึ่งที่ผู้บริโภคชาวไทยนิยมรับประทาน
เป็นประจาํ และมีแนวโน้มเพิ่มมากข้ึนตามลาํดับ โดยเฉพาะกลุ่มผูบ้ ริโภคที่เป็นเด็กและเยาวชน
ซ่ึงน้าํ มนั ที่ทอดซ้าํ หลายคร้ังจนเสื่อมสภาพแลว้จะเกิดกลุ่มสารประกอบที่เป็นอนั ตรายต่อร่างกาย
