การวิจัยครั้งนี้ มีวัตถุประสงค์เพื่อพัฒนารูปแบบ และศึกษาผลการทดลองใช้รูปแบบการบริหารโครงการอาหารกลางวันแบบยั่งยืนด้วยเกษตรอินทรีย์วิถีชีวิตแบบเศรษฐกิจพอเพียง การดำเนินงานแบ่งเป็น 2 ขั้นตอน คือ การพัฒนารูปแบบ และศึกษาผลการทดลองใช้รูปแบบการบริหารโครงการอาหารกลางวันแบบยั่งยืนด้วยเกษตรอินทรีย์วิถีชีวิตแบบเศรษฐกิจพอเพียง กลุ่มเป้าหมายในการวิจัย ได้แก่ ผู้บริหาร ครู คณะกรรมสถานศึกษา ขั้นพื้นฐาน นักเรียน และผู้ปกครองนักเรียน จำนวน 170 คน เครื่องมือที่ใช้ในการวิจัย มี 8 รายการ เป็นแบบสอบถามมาตราส่วนประมาณค่า 6 รายการ แบบประเมินความรู้ และแบบประเมินผลการดำเนินงานโครงการอาหารกลางวันแบบยั่งยืนด้วยเกษตรอินทรีย์วิถีชีวิตแบบเศรษฐกิจพอเพียง
สรุปผลการวิจัย รูปแบบการบริหารโครงการอาหารกลางวันแบบยั่งยืนด้วยเกษตรอินทรีย์วิถีชีวิตแบบเศรษฐกิจพอเพียง ของโรงเรียนบ้านตาวัง มีองค์ประกอบที่สำคัญ ได้แก่ หลักการบริหารโรงเรียน ปัจจัย การบริหาร กระบวนการพัฒนา และกิจกรรมพัฒนา ผลการตรวจสอบความเหมาะสมและความเป็นไปได้ของรูปแบบ โดยผู้เชี่ยวชาญ พบว่า อยู่ในระดับมากที่สุด เมื่อนำรูปแบบไปทดลองใช้ทำให้เกิดผลดีในด้านต่างๆ คือ การมีส่วนร่วมของชุมชน ครูและชุมชน มีความพึงพอใจต่อการดำเนินโครงการอาหารกลางวัน พฤติกรรมการดูแลอาหารของผู้ปกครอง พฤติกรรมการบริโภคอาหารของนักเรียน และระบบการสุขาภิบาลอาหารและโภชนาการ ซึ่งอยู่ในระดับมากที่สุดทุกรายการ ส่วนผลการทดสอบความรู้ของนักเรียนด้านอาหารโภชนาการและการเกษตร มีค่าเฉลี่ยคิดเป็นร้อยละ 96.80 จากการพัฒนาโครงการอาหารกลางวัน ทำให้ผู้ปกครองมีส่วนร่วมในการประกอบอาหารกลางวันทุกวัน นักเรียนได้รับประทานอาหารกลางวันที่มีคุณค่าอย่างเพียงพอทุกคน ส่งผลดีต่อสุขภาพ ทำให้ภาวะทุพโภชนาการของนักเรียนลดลง ผลสัมฤทธิ์ทางการเรียนเพิ่มขึ้น ทำให้โรงเรียนได้รับรางวัลทั้งในระดับเครือข่าย เขตพื้นที่ การศึกษา และได้รับรางวัลโรงเรียนจัดโครงการอาหารกลางวันระดับดีมาก ซึ่งส่งผลให้เกิดความร่วมมือต่อการพัฒนาอาหารของเด็กในวัยเรียนต่อไป
