เนื่องจากปัจจุบันคนไทยนิยมเลี้ยงเป็ดกันเป็นจำนวนมาก ซึ่งในไข่เป็ดนั้นมีคุณประโยชน์มากมายและยังอุดมไปด้วยโปรตีนชนิดต่างๆอีกมากมาย แต่เนื่องจากในประเทศไทยเป็นประเทศที่มีอากาศร้อนจึงทำให้ไข่เป็ดเน่าเสียได้ง่ายกว่าปกติ ดังนั้นผู้จัดทำจึงมีความคิดเห็นกันว่าจะนำไข่เป็นมาทำเป็นไข่เค็มโดยวิธีการถนอมอาหารและดัดแปลงพัฒนากลิ่นของไข่เค็ม พัฒนารสชาติของไข่เค็มให้มีความแปลกใหม่ โดยในการทำโครงงานครั้งนี้ทางคณะผู้จัดทำจะผลิตไข่เค็มให้มีกลิ่นใบเตย ตะไคร้หอม โดยได้ทำการทดลองและสรุปผล ได้ผลิตภัณฑ์ ไข่เค็มกลิ่นใบเตยและตะไคร้หอม ที่มีรสชาติแปลกใหม่ มีกลิ่นสมุนไพร และสามารถนำไปประยุกต์ในชีวิตประจำวันและใช้ประกอบเป็นอาชีพได้
