บทนำ
ข้าวโพด (Corn) เป็นพืชไร่อีกชนิดหนึ่งที่มีความสำคัญทางเศรษฐกิจ มีการบริโภคทั้งภายในประเทศและส่งไปขายยังต่างประเทศ ภายในประเทศนิยมบริโภคทั้งข้าวโพดฝักอ่อนและข้าวโพดฝักสด อีกทั้งข้าวโพดยังถูกนำมาทำเป็นอาหารกิน เช่นนำมา ต้ม ปิ้ง ผัด เพราะข้าวโพดมีรสชาติหอมหวานอร่อยติดปากคนไทย นอกจากนี้เรายังสามารถใช้ประโยชน์จาก ส่วนต่างๆของข้าวโพดได้ทั้งหมด ซึ่งสรุปได้พอสังเขปดังนี้
เราใช้ประโยชน์จากส่วนต่างๆของข้าวโพดที่เหลือจาก หลังการเก็บเกี่ยวผลผลิตทางการเกษตร อาทิเช่น ลำต้น ใบ เปลือก และซังข้าวโพดมาทำเป็นปุ๋ยพืชสด ซึ่งจะช่วยในเรื่องของการปรับปรุงบำรุงดิน ช่วยเพิ่มอินทรียวัตถุในดินและธาตุอาหารให้กับดิน ทำให้ดินเหมาะสมต่อการเจริญเติบโตของพืช อีกทั้งเรายังใช้ลำต้น ใบ ซังข้าวโพด รวมไปถึงฝักอ่อนของข้าวโพดนำมาหมักเป็นพืชอาหารสัตว์ไว้เลี้ยงสัตว์ เพื่อเพิ่มคุณค่าทางโภชนาการให้กับสัตว์ ใช้เป็นอาหารเสริมไว้เลี้ยงสัตว์ สามารถเก็บไว้เป็นอาหารเลี้ยงสัตว์ในฤดูที่ขาดแคลนอาหารได้ ข้าวโพดอาหารสัตว์ยังช่วยในเรื่องของการลดต้นทุนในเรื่องของค่าใช้จ่ายในด้านอาหารเลี้ยงสัตว์ในการทำฟาร์มปศุสัตว์ได้อีกด้วย ในด้านของพลังงาน เราใช้ซังข้าวโพดมาผลิตเอทานอล เพื่อใช้เป็นเชื้อเพลิงพลังงานทดแทน ในด้านอาหารของคน เรานำฝักสด มาต้ม นึ่ง ย่างรับประทาน และนำเอาเมล็ดข้าวโพดแก่มาบดทำเป็นแป้ง นำเอาแป้งมาทำเป็นส่วนผสมของอาหารคาวหวาน อีกทั้งยังสามารถนำฝักอ่อนของข้าวโพดมาทำเป็นส่วนประกอบการทำอาหารได้หลายชนิด และข้าวโพดฝักอ่อนยังมีเยื้อใยอาหารสูงมีสรรพคุณที่ช่วยในระบบการขับถ่ายทำงานเป็นปกติ
ข้าวโพดจึงเป็นพืชที่มีคุณประโยชน์มากมายหลายประการ ทั้งใช้ในด้านทางการเกษตร ใช้เป็นพืชอาหารสัตว์ ใช้เป็นส่วนประกอบเชื้อเพลิงพลังงานทดแทน และเป็นอาหารของมนุษย์ที่มีคุณค่าทางโภชนาการสูง ทั้งนี้เราสามารถนำส่วนต่างๆของข้าวโพดมาใช้ประโยชน์ได้ทุกส่วน ข้าวโพดจึงนับว่าเป็นพืชสารพัดประโยชน์ที่ดีชนิดหนึ่ง สัมมนาฉบับนี้จึงมีวัตถุประสงค์เพื่อนำเสนอการใช้ประโยชน์จากส่วนต่างๆของข้าวโพด
