เอแคลร์ ที่รู้จักกันดีใน เมืองไทย เป็นขนมก้อนกลมๆ รีๆ ขนาดพอคำ หรือ สองคำ มีไส้ครีมอยู่ภายใน อันที่จริง โดยทั่วๆ ไป ขนมลักษณะนี้ ชาวต่างประเทศเรียกว่า โพรฟิเทอะโร (Profiterole) บ้างก็เรียกว่า ชูส์ (Choux) ซึ่งเป็นภาษาฝรั่งเศส ส่วนชาวอังกฤษเรียกว่า ครีมพัฟ (Cream Puff) ส่วนขนมเอแคลร์ (Eclair) ในความหมายของชาวต่างประเทศ มีลักษณะเป็นท่อนยาว รีๆ โดยมีเนื้อแป้งและไส้ข้างใน คล้ายกับโพรฟิเทอะโร ลักษณะเด่นของขนมเอแคลร์คือ เปลือกขนมคงรูป และภายในเป็นรูกลวง จึงใส่ไส้ต่างๆ ตามใจเราได้ เช่น ไส้ครีมวานิลลา ไส้ครีมช็อคโกแล็ต หรือ ไส้ครีมกาแฟ ด้วยการเจาะรูเล็ก ๆ ที่เปลือก แล้วบีบไส้ครีมต่าง ๆ ใส่เข้าไปในช่องว่างให้เต็ม หรือถ้าทำในแบบครีมพัฟ จะตัดด้านบนหรือตัดกลางผ่าครื่ง บีบครีมใส่ลงไปในตัวขนมให้พูนขึ้นมา แล้ววางฝาปิดทับไปบนขนม พร้อมจัดให้สวยงาม จากลักษณะของเปลือกขนมเอแคลร์ ที่ไม่เหมือนกับขนมอื่น
