การวิจัยครั้งนี้มีวัตถุประสงค์ (1) เพื่อศึกษาสุขาภิบาลอาหารด้านกายภาพของร้านอาหารรอบมหาวิทยาลัยนเรศวร (2) เพื่อศึกษาความรู้ ทัศนคติและพฤติกรรมเกี่ยวกับสุขาภิบาลอาหารของผู้จำหน่ายอาหารร้านอาหารรอบมหาวิทยาลัยนเรศวร (3) เพื่อศึกษาความสัมพันธ์ระหว่างความรู้ ทัศนคติกับพฤติกรรมด้านการสุขาภิบาลอาหารของผู้จำหน่ายอาหารร้านอาหารรอบมหาวิทยาลัยนเรศวร กลุ่มตัวอย่างที่ศึกษาเป็นผู้จำหน่ายอาหารร้านอาหารรอบมหาวิทยาลัยนเรศวร ทั้งหมด 83 คน โดยใช้แบบสอบถามในการเก็บรวบรวมข้อมูล สถิติที่ใช้ในการวิเคราะห์ข้อมูล ความถี่ ร้อยละ และ ไค-สแควร์
ผลการศึกษาพบว่าจากการประเมินสุขาภิบาลอาหารทางด้านกายภาพ ร้านอาหารที่ผ่านเกณฑ์มาตรฐาน จำนวน 4 ร้าน ร้านอาหารที่ไม่ผ่านเกณฑ์มาตรฐาน จำนวน 79 ร้าน จากการศึกษาความรู้ ทัศนคติ และพฤติกรรมด้านสุขาภิบาลอาหาร ผู้จำหน่ายอาหารส่วนใหญ่มีความรู้อยู่ในระดับดี ทัศนคติอยู่ในระดับปานกลาง และพฤติกรรมด้านการสุขาภิบาลอาหารอยู่ในระดับดี
จากการศึกษาความสัมพันธ์ระหว่างความรู้ ทัศนคติ กับพฤติกรรมด้านการสุขาภิบาลอาหาร พบว่า ผู้จำหน่ายอาหารมีความรู้อยู่ในระดับดีแต่ไม่มีความสัมพันธ์กับพฤติกรรมด้านการสุขาภิบาลอาหาร ส่วนทัศนคติของผู้จำหน่ายอยู่ในระดับปานกลางแต่ไม่มีความสัมพันธ์กับพฤติกรรมด้านการสุขาภิบาลอาหาร
