โครงงานวิทยาศาสตร์ เรื่องสเปรย์พริกไทยไล่แมลงสาบ เป็นโครงงานประเภทการทดลอง มีวัตถุประสงค์ เพื่อทดสอบประสิทธิภาพของน้ำยาไล่แมลงสาบจากพริกไทย และเพื่อเปรียบเทียบอัตราส่วนที่เหมาะสมของน้ำยาไล่แมลงสาบจากพริกไทย มีวิธีการดำเนินงานโดย นำพริกไทยดำมาป่นให้ละเอียด แยกใส่ในภาชนะในปริมาณที่ต่างกันในปริมาณ 20 กรัม 30 กรัม และ 40 กรัม ตามลำดับแล้วสกัดด้วยเอทานอล (Ethanol) หรือ เอทิลแอลกอฮอล์ (Ethyl alcohol) ลงในภาชนะที่ใส่พริกไทยป่นไว้ภาชนะละ 100 มิลลิลิตร หมักส่วนผสมทั้งหมดไว้ 1 วันจะได้น้ำยาจากพริกไทยที่มีความเข้มข้นที่ต่างกัน
เมื่อนำมาทดลอง ผลการทดลองพบว่า แมลงสาบตายหมดทุกความเข้มข้น แต่จะตายในเวลาที่แตกต่างกัน โดยที่น้ำยาที่ใส่พริกไทยป่น 20 กรัม ตายในเวลา 8 นาที น้ำยาใส่พริกไทยป่น 30 กรัม ตายในเวลา 4 นาที และน้ำยาที่ใส่พริกไทยป่น 40 กรัม ตายในเวลาเพียง 1.30 นาที
