บทนำ

1.1 ที่มาและความสำคัญของโครงงาน
จากสภาพปัญหาเศรษฐกิจถดถอยมาตั้งแต่ปี 2540 ก่อให้เกิดปัญหาความเดือดร้อนแก่ประชาชนในวัยใช้แรงงานโดยทั่วไปเนื่องจากถูกเลิกจ้างงานจากภาคอุตสาหกรรมและบริการ แรงงานเหล่านี้ที่เดินทางกลับภูมิลำเนาเดิมและประสงค์ประกอบอาชีพการเกษตรโดยแนวทางพระราชดำรัสปรัชญา “เศรษฐกิจพอเพียง” แต่ปัญหาการว่างงานยังคงรุนแรงและขยายผลกระทบออกไปทั้งในสังคมเมืองส่วนกลาง และสังคมภูมิภาคด้วย จึงได้ริเริ่มจัดทำโครงการเกษตรยังชีพขึ้นเพื่อช่วยแก้ไขและรองรับปัญหาแรงงานที่ว่างงานจำนวนหนึ่งโดยภาคราชการให้การสนับสนุนปัจจัยการผลิตแก่ประชาชนและคนว่างงานได้ทำการเกษตรยังชีพซึ่งจะช่วยให้มีอาหารไว้เลี้ยงครอบครัวตนเองโดยใช้พื้นที่ตนเองมีอยู่เพียงเล็กน้อยให้เกิดประโยชน์สูงสุดมีการปลูกพืชผักสวนครัวไว้ใช้บริโภคในครัวเรือน
จากระราชดำรัส เมื่อวันที่ 4 ธันวาคม 2540 ที่ว่า “....การจะเป็นเสือนั้นไม่สำคัญ สำคัญอยู่ที่เราพออยู่ พอกิน และมีเศรษฐกิจการเป็นอยู่แบบพอมี พอกิน แบบพอมี พอกิน หมายความว่า อุ้มชูตัวเองได้ ให้มีพอเพียงกับตัวเอง.....”
“เศรษฐกิจของเราขึ้นอยู่กับการเกษตรมาแต่ไหนแต่ไรแล้วรายได้ของประเทศที่ได้มาใช้สร้างความเจริญด้านต่าง ๆ เป็นรายได้จากการเกษตรเป็นส่วนใหญ่ จึงอาจกล่าวได้ว่าความเจริญของประเทศต้องอาศัยความเจริญของการเกษตรเป็นสำคัญ และงานทุก ๆ ฝ่ายจะดำเนินก้าวหน้าไปได้ก็เพราะการเกษตรของเราเจริญ”
พระบรมราโชวาทที่พระราชทานแก้บัณฑิตใหม่ของมหาวิทยาลัยเกษตรศาสตร์ เมื่อวันที่ 4 กรกฎาคม 2507 พระราชดำรัสและพระราชกรณียกิจในเรื่องที่เกี่ยวข้องกัน พระองค์ได้แสดงให้เห็นว่า เมืองไทยจะน่าอยู่หากพัฒนาประเทศไทยใช้การเกษตรเป็นพื้นฐาน
จากพระราชดำรัสดังกล่าว ผู้จัดทำได้น้อมนำพระราชดำรัสตามหลักเศรษฐกิจพอเพียง มาใช้ในโรงเรียนประภัสสรรังสิต องค์การบริหารส่วนจังหวัดพัทลุง โดยเล็งเห็นถึงสภาพพื้นที่ที่ว่างจำนวนมาก เช่นพื้นที่หลังอาคารเรียน จึงได้ปลูกผักสวนครัวใช้ในชีวิตประจำวันและสามารถสร้างรายได้ให้เกิดขึ้นระหว่างเรียน
1.2 วัตถุประสงค์ของการศึกษา
1. เพื่อให้ผู้เรียนได้ศึกษาแนวคิด แนวปฏิบัติตามแนวเศรษฐกิจพอเพียง
2. เพื่อให้เกิด ความรู้ ความเข้าใจ ทักษะ และการเรียนรู้ การปลูกพืชสวนครัว
3. เพื่อให้นักเรียนรู้จักใช้เวลาว่างให้เกิดประโยชน์
4. สร้างรายได้แก่ผู้ปลูกและลดรายจ่ายของครอบครัว
1.3 ขอบเขตการศึกษา
“การทำผักผลัด” เป็นโครงงานที่ศึกษาเพื่อนำทรัพยากรที่ใช้พื้นที่ของตนเองมีอยู่เพียงเล็กน้อยให้เกิดประโยชน์สูงสุดมีการปลูกพืชผักสวนครัวไว้ใช้บริโภคในครัวเรือน
1.ประชากร ประชากรในการศึกษาครั้งนี้ คือ นักเรียนชั้นมัธยมศึกษาปีที่ 6
2. ระยะเวลาที่ใช้ในการศึกษาและมาปฏิบัติตั้งแต่วันที่ 16 พ.ย. 2556 ถึงวันที่ 3 ธ.ค2556


1.4 คำนิยามศัพท์เฉพาะ
1. โรงเรียน หมายถึง โรงเรียนกุญชรศิรวิทย์ อำเภอไพรบึง จังหวัดศรีสะเกษ องค์การบริหารส่วนจังหวัดศรีสะเกษ
2. นักเรียน หมายถึง นักเรียนที่เรียนอยู่โรงเรียนกุญชรศิรวิทย์ อำเภอไพรบึง จังหวัดศรีสะเกษ ปีการศึกษา 2554
3. เกษตร หมายถึง ที่ดิน , ทุ่ง , นา , ไร่ เช่น พุทธเกษตร
4. พอเพียง หมายถึง ได้เท่าที่กะไว้ เช่น ได้เท่านี้ก็พอแล้ว
5. พระราชดำรัส หมายถึง คำสั่งสอนของพระบาทสมเด็จพระเจ้าอยู่หัว
6. ศึกษา หมายถึง การเล่าเรียน , ฝึกฝน , และอบรม
7. ค้นคว้า หมายถึง ข้อมูลอย่างถี่ถ้วนตามหลักวิชา , เสาะหาเอามา

10. น้ำ หมายถึง สิ่งที่จำเป็นต่อการดำรงชีวิตและการเจริญเติบโตของพืช
11. แสงแดด หมายถึง อิทธิพลของการงอกและการเจริญเติบโตของพืช
12. ปุ๋ย หมายถึง ธาตุอาหารของพืช
