การศึกษาครั้งนี้เป็นการศึกษาเชิงพรรณนา (Descriptive Study) มีวัตถุประสงค์เพื่อศึกษาความสัมพันธ์ระหว่างความรู้ ทัศนคติ กับการปฏิบัติตัวในการบริโภคอาหารของนักเรียนชั้นประถมศึกษาปีที่ 6 โรงเรียนบ้านโพธิ์ไทร ตำบลโพธิ์ไทร อำเภอโพธิ์ไทร จังหวัดอุบลราชธานี จำนวน 66 คน เก็บข้อมูล โดยใช้แบบสอบถาม ระหว่าง เดือนมกราคม ถึง เดือนมีนาคม 2558 และนำข้อมูลแบบสอบถามมาวิเคราะห์ด้วยโปรแกรมคอมพิวเตอร์สำเร็จรูป โดยวิเคราะห์ข้อมูลทางสถิติเชิงพรรณนา (Descriptive Study) ได้แก่ ค่าร้อยละ ค่าเฉลี่ย ค่าต่ำสุด ค่าสูงสุด และ ส่วนเบี่ยงเบนมาตรฐาน และสถิติเชิงอนุมาน (Inferential Statistics) วิเคราะห์ความสัมพันธ์ระหว่างความรู้ ทัศนคติ กับการปฏิบัติตัวในการบริโภคอาหารด้วยค่าสัมประสิทธิ์ของเพียร์สัน (Pearson’s Correlation Coefficient)
ผลการศึกษา พบว่า นักเรียนส่วนใหญ่เป็นเพศหญิง คิดเป็นร้อยละ 51.50 ได้รับค่าใช้จ่ายจากผู้ปกครอง 10 - 25 บาทต่อวัน คิดเป็นร้อยละ 72.70 มีผลการเรียน (เกรดเฉลี่ย) ในเทอมที่ผ่านมาอยู่ระหว่าง 3.01-3.50 คิดเป็นร้อยละ 39.40 ความรู้เกี่ยวกับการบริโภคอาหารอยู่ในระดับต่ำ คิดเป็นร้อยละ 60.60 รองลงมามีความรู้อยู่ในระดับปานกลาง คิดเป็นร้อยละ 24.20 และมีความรู้อยู่ในระดับสูง คิดเป็นร้อยละ 15.20 ทัศนคติอยู่ในระดับปานกลาง คิดเป็นร้อยละ 66.70 รองลงมาอยู่ในระดับดี คิดเป็นร้อยละ 33.30 การปฏิบัติตัวในการบริโภคอาหารอยู่ในระดับปานกลาง คิดเป็นร้อยละ 72.70 รองลงมาอยู่ในระดับไม่ดี คิดเป็นร้อยละ 27.30 ความสัมพันธ์ระหว่างความรู้กับการปฏิบัติตัวในการบริโภคอาหารไม่มีความสัมพันธ์กัน (P - value = 0.904) และความสัมพันธ์ระหว่างทัศนคติกับการปฏิบัติตัวในการบริโภคอาหารไม่มีความสัมพันธ์กัน (P - value = 0.823)
จากผลการศึกษาครั้งนี้ นักเรียนไม่มีความรู้เรื่องประเภทของสารอาหาร ดังนั้น ควรให้ความรู้นักเรียนในเรื่องประเภทของสารอาหาร การรับประทานอาหารตามหลัก 5 หมู่ และการรับประทานตามหลักโภชนาการ เพื่อให้นักเรียนมีความรู้เพิ่มขึ้น
