แก่นตะวันหรือทานตะวันหัว หรือที่เป็นชื่อเรียกภาษาไทยว่า แห้วบัวตอง แกนตะวันภาษาอังกฤษ Jerusalem artichoke, Sunroot, Earth Apple, Topinambour มีชื่อวิทยาศาสตร์ว่า Helianthus tuberosus L. วัดอยู่ในวงศ์ ASTERACEAE มีถิ่นกำเนิดดั้งเดิมในทวีปอเมริกาเหนือและต่อมาภายหลังจึงแพร่หลายไปยังสหัฐอเมริกาและทางยุโรป ปัจจุบันมีการปลูกอย่างแพร่หลายในสหรัฐอเมริกา แคนาดา ฝรั่งเศส รัชเซีย จีนตอนเหนือ ประเทศในแทบแอฟริกากลาง และทางตอนใต้ของออสเตรเรีย แก่นตะวัน เป็นพืชที่สามารถปรับสภาพได้ดีในทวีปอากาศร้อน และมีความทนทานแข็งแรง มีสกุลเดียวกับทานตะวัน มีดอกคล้าย ดอกทานตะวันและบัวตอง แต่ขนาดเล็กกว่า และสามารถสะสมสารอาหารไว้ในหัวใต้ดินคล้ายกับมันฝรั่ง แต่มีรสชาติคล้ายแห้ว ได้มีการนำแก่น เข้ามาปลูกในประเทศไทยเมื่อปี พ.ศ. 2539 ต่อมา รศ.ดร. สนั่น จอกลอย อาจารย์คณะเกษตรศาสตร์มหาวิทยาลัยขอนแก่น ก็ไดนำสายพันธุ์แก่นตะวันเข้ามาทดลองปลูกจำนวน 24สายพันธุ์ และทำการวิจัยและพัฒนาสายพันธุ์มาเรื่อยๆ จนพบว่า สายพันธุ์ KKU Ac 008 สามารถให้ผลผลิตของหัวสดถึงไร่ละ 2-3 ต้น ภายหลังจึงได้มีการเปลี่ยนชื่อใหม่เป็น “แก่นตะวัน” ( รศ.ดร.สนั่น จอกลอย : หน้า 1 : 2557)
