โครงงานนี้มีวัตถุประสงค์เพื่อศึกษาการวางแผนการจัดการโซ่อุปทานอุตสาหกรรมแปรรูปกล้วยหอมทองยัดเยียด กรณีศึกษา กลุ่มแม่บ้านเกษตรกรบ้านปางป้อมเหนือ ซึ่งในกลุ่มแม่บ้านเกษตรกรมีการผลิตกล้วยหอมทองยัดเยียด 2 ชนิด 5 ขนาด โดยพบปัญหาคือ ทางกลุ่มแม่บ้านเกษตรกรยังไม่มีการวางแผนการผลิตและการจัดหาวัตถุดิบ ส่งผลให้ไม่สามารถผลิตกล้วยหอมทองยัดเยียดได้เพียงพอต่อความต้องการของลูกค้า และมีต้นทุนในการผลิตสูง จึงสร้างแบบจำลองทางคณิตศาสตร์ในการวางแผนการผลิต และจัดหาวัตถุดิบของผลิตภัณฑ์กล้วยหอมทองยัดเยียดให้มีต้นทุนรวมต่ำที่สุด

จากปัญหาที่กล่าวมาผู้จัดทำโครงงานได้ทำการแก้ปัญหากระบวนการผลิต และจัดหาวัตถุดิบ โดยการเก็บข้อมูลขั้นปฐมภูมิ และทุติยภูมิ เพื่อใช้ในการสร้างแบบจำลองทางคณิตศาสตร์โดยใช้โปรแกรม Gurobi Solver ซึ่งแบบจำลองทางคณิตศาสตร์ที่สร้างขึ้นใช้สำหรับการวางแผนผลิต และการจัดเก็บวัตถุดิบ เป็นแบบจำลองสำหรับต้นทุนต่ำที่สุด ผลลัพธ์ที่ได้จากแบบจำลอง คือต้นทุนรวมในการผลิตลดลงจากเดิม 77 เปอร์เซ็นต์ เมื่อเทียบกับต้นทุนรวมของกลุ่มแม่บ้านเกษตรกรบ้านปางป้อมเหนือในปัจจุบัน
