โดยกรมสามัญศึกษา ได้รับบริจาคที่ดิน จากนายผาสุก และนางเง็ก มณีจักร สองสามีภรรยา คหบดีชาวอำเภอปากเกร็ด ที่มีความประสงค์ให้สร้างโรงเรียนในเครือสวนกุหลาบวิทยาลัย บนพื้นที่ดังกล่าว จึงเกิดการประสานงานจัดตั้งขึ้น เมื่อวันที่ 30 มีนาคมพ.ศ. 2521 เดิมให้ชื่อไว้ว่า “โรงเรียนสวนกุหลาบวิทยาลัย ๒ (ผาสุก มณีจักร)” และมอบหมายให้ผู้อำนวยการโรงเรียนสวนกุหลาบวิทยาลัย รักษาราชการในตำแหน่งอาจารย์ใหญ่ของโรงเรียน จนถึงปลายปีถัดมา จึงเปลี่ยนชื่อโรงเรียน เป็นชื่อที่ใช้อยู่ในปัจจุบัน และในปีเดียวกัน นางอัมพา แสนทวีสุข ได้รับการแต่งตั้งให้เป็นอาจารย์ใหญ่คนแรก และเลื่อนฐานะขึ้นเป็นผู้อำนวยการคนแรกของโรงเรียนฯ ในเวลาต่อมา
โรงเรียนสวนกุหลาบวิทยาลัย นนทบุรี ได้รับพระมหากรุณาธิคุณจาก สมเด็จพระเทพรัตนราชสุดาฯ สยามบรมราชกุมารี เสด็จพระราชดำเนินทรงเปิดอาคารเรียน “สธ ๑, สธ ๒ และ สธ ๓” เมื่อกลางปี พ.ศ. 2525 และปลายปี พ.ศ. 2529 ตามลำดับ ตลอดจนพระราชทานนาม อาคารเรียน “สธ ๔” และ อาคารหอประชุม “สิรินธราลัย” ด้วย นอกจากนี้ โรงเรียนฯ ยังได้รับรางวัลสถานศึกษาพระราชทาน ประจำปีการศึกษา 2532 และ 2544 และในปี พ.ศ. 2541 นักเรียนของโรงเรียนฯ ยังได้รับรางวัลเหรียญทองแดง จากการเข้าร่วมการแข่งขันฟิสิกส์โอลิมปิก ที่ประเทศอิตาลี ในฐานะผู้แทนประเทศไทย ขณะที่นักกีฬาของโรงเรียนฯ ได้รับรางวัลเหรียญทอง ในฐานะผู้แทนทีมชาติไทย จากการเข้าร่วมการแข่งขันวอลเลย์บอลชายหาด ในการแข่งขันกีฬาเอเชียนเกมส์ครั้งที่ 13 อีกด้วย

โรงเรียนสวนกุหลาบวิทยาลัย นนทบุรี ถือกำเนิดขึ้น โดยเจตจำนงของ นายผาสุก และ นางเง็ก มณีจักร คหบดีชาวปากเกร็ดสองสามีภรรยา ซึ่งมีบุตรชายและหลานชายเป็นศิษย์เก่าโรงเรียนสวนกุหลาบวิทยาลัย [3] บริจาคที่ดินบริเวณใกล้กับถนนติวานนท์เป็นจำนวน 25 ไร่ 1 งาน 18 ตารางวา เพื่อสร้างโรงเรียนในเครือสวนกุหลาบวิทยาลัย เมื่อต้นปีการศึกษา 2520 โดยมีผู้ร่วมก่อตั้งคือ นายสุวรรณ จันทร์สม อดีตผู้อำนวยการโรงเรียนสวนกุหลาบวิทยาลัย ผู้อำนวยการกองการมัธยมศึกษาในขณะนั้น, นายสมพงษ์ พูลสวัสดิ์ และนายกว้าง รอบคอบ อดีตอธิบดีกรมสามัญศึกษา ขณะนั้นเป็นผู้อำนวยการโรงเรียนปากเกร็ด เป็นผู้ประสานงานจัดตั้ง
ในระยะเริ่มแรก โรงเรียนยังไม่มีอาคารเรียนถาวร มีเพียงที่ดินซึ่งกำลังถมและปรับสภาพ จึงต้องไปอาศัยใช้โรงเรียนชลประทานสงเคราะห์ เป็นสถานที่ในการรับสมัครเข้าเรียน และเมื่อกระทรวงศึกษาธิการประกาศตั้งโรงเรียนฯ เมื่อวันที่ 30 มีนาคม พ.ศ. 2521 โดยใช้ชื่อว่า โรงเรียนสวนกุหลาบวิทยาลัย ๒ (ผาสุก มณีจักร) มีคณาจารย์ชุดแรก 22 คน นักเรียนชั้น ม.ศ.1 และ ม.1 รุ่นแรก จำนวน 12 ห้อง รวม 527 คน ครู-อาจารย์ 22 ท่าน ได้ฝากนักเรียนชายให้เรียนที่โรงเรียนสวนกุหลาบวิทยาลัย และฝากนักเรียนหญิงให้เรียนที่โรงเรียนสตรีนนทบุรี โดยอยู่ในความดูแลของคณาจารย์ชายหญิง รวม 9 ท่าน ต่อมาในปีการศึกษา 2522 โรงเรียนได้รับงบประมาณก่อสร้างอาคารเรียนชั่วคราว จำนวน 25 ห้องเรียน และอาคารเรียนถาวร จึงได้ย้ายนักเรียนกลับคืนมาทั้งหมด
แต่เนื่องจากบริเวณที่ตั้งของโรงเรียนไม่ติดถนน นายประพัฒน์ แก่นรัตนะ เจ้าของที่ดินด้านหน้าโรงเรียนที่ติดถนนติวานนท์ จึงได้อนุญาตให้ที่ดินเพื่อสร้าง “ถนนแก่นรัตนะ” (ถนนส่วนบุคคล) เป็นทางเข้าออกโรงเรียน ขนาดของถนน กว้าง 12 เมตร ยาว 343 เมตร และได้ทำหนังสือมอบไว้ต่อกรมสามัญศึกษา ต่อมาในปี พ.ศ. 2545 ได้บริจาคที่ดินในส่วนที่เป็นถนนให้กับทางโรงเรียน โดยเทศบาลนครปากเกร็ดจัดงบประมาณจัดสร้างถนนคอนกรีตให้กับทางโรงเรียน ทำให้พื้นที่ของโรงเรียนเพิ่มขึ้นเป็น 25 ไร่ 3 งาน 18 ตารางวา จนถึงปัจจุบัน
ต่อมา ในวันที่ 9 พฤศจิกายน พ.ศ. 2522 กระทรวงศึกษาธิการ ได้ประกาศเปลี่ยนชื่อโรงเรียน จาก โรงเรียนสวนกุหลาบวิทยาลัย ๒ (ผาสุก มณีจักร) เป็น โรงเรียนสวนกุหลาบวิทยาลัย นนทบุรี ซึ่งเป็นชื่อที่ใช้มาจนถึงปัจจุบัน
เมื่อวันที่ 13 สิงหาคมพ.ศ. 2525 สมเด็จพระเทพรัตนราชสุดาฯ สยามบรมราชกุมารี ทรงมีพระมหากรุณาธิคุณโปรดเกล้าโปรดกระหม่อม พระราชทานพระนามาภิไธยย่อ สธ ให้เป็นนามของอาคารเรียนสองหลังแรกของโรงเรียนฯ คือ สธ ๑ และ สธ ๒ พร้อมทั้งได้เสด็จพระราชดำเนินทรงเปิดอาคารเรียนทั้งสองหลังด้วยพระองค์เอง โดยอักษรพระนามาภิไธยย่อ สธ ที่ประดับอยู่บนอาคารในวันนั้น ทำขึ้นจากโฟมพ่นสีทอง ซึ่งเป็นผลงานของนายอมร นิพันธ์ประศาสน์ อาจารย์หัวหน้าหมวดวิชาศิลปศึกษาในขณะนั้น
