ที่มาและความสำคัญของโครงงาน
ส้มตำ เป็นอาหารคาวของไทยอย่างหนึ่ง มีต้นกำเนิดไม่แน่ชัดโดยน่าจะมาจากภาคตะวันออกเฉียงเหนือ ของไทยและ ประเทศลาว ส่วนมากจะทำโดยนำมะละกอดิบที่ขูดเป็นเส้น มาตำในครกกับ มะเขือลูกเล็ก ถั่วลิสงคั่ว กุ้งแห้ง พริก และกระเทียม ปรุงรสด้วยน้ำตาลปี๊บ น้ำปลา ปูดองหรือปลาร้า ให้มีรสเปรี้ยว เผ็ด และออกเค็มเล็กน้อย นิยมกินกับข้าวเหนียวและไก่ย่าง โดยมีผักสด เช่น กระหล่ำปลี หรือถั่วฝักยาว เป็นเครื่องเคียง ส้มตำเป็นอาหารที่คนไทยทุกนิยมรับประทานค่อนข้างมาก เป็นอาหารที่สามารถทำได้ง่ายไม่สิ้นเปลืองค่าใช้จ่ายในการทำส้มตำและยังสามารถนำไปประกอบเป็นอาชีพได้
ส้มตำเป็นอาหารจานเด็ด สำหรับผู้นิยมอาหารรสแซ่บ และยังได้รับความนิยมในหมู่ชาวต่างชาติ จนกลายเป็นอาหารประจำชาติไปแล้ว
คำว่า "ส้มตำ" เป็นภาษาถิ่น มาจากคำว่า "ส้ม" มีความหมายว่ารสเปรี้ยว ส่วนทำว่า "ตำ" เป็นกริยา หมายถึง การทำให้แหลกโดยอุปกรณ์เฉพาะ ที่เรียกว่า "สาก" คำว่า "ส้มตำ" จึงหมายถึง อาหารรสเปรี้ยวที่ผ่านการตำ
กลุ่มของดิฉันเลยมีแนวคิดที่จะทำโครงงานภาษาอังกฤษเรื่องส้มตำ เพราะส้มตำเป็นอาหารที่คนไทยนิยมรับประทานและชาวต่างชาติก็ชอบรับประทานส้มตำทุกครั้งที่มาเมืองไทยและเป็นอาหารที่ขึ้นชื่อของคนไทย นอกจากต้มยำกุ้ง แกงเขียวหวาน ผัดไทยแล้วก็ยังมีส้มตำอีกด้วย ถึงส้มตำจะไม่เป็นอาหารที่มหัศจรรย์ ไม่หรูหรา และราคาถูก แต่เป็นอาหารที่ทรงคุณค่ากับคนไทยมานานเป็นอาหารที่อร่อยรับประทานง่าย รับประทานได้ทุกเพศทุกวัย กลุ่มของดิฉันเลยอยากจะศึกษาส้มตำว่าขั้นตอนการทำ อุปกรณ์ และส่วนประสม ว่ามีอะไรบ้างเพื่อที่จะทำส้มตำเป็นอาหารจานเด็ดที่ทรงคุณค่าน่ารับประทานและที่สำคัญยังเอร็ดอร่อยชวนรับประทาน และสามารถนำไปประกอบเป็นอาชีพได้อีกด้วยหรือทำรับประทานเองก็ได้
