สรุปผล
การศึกษาความหลากหลากของผักพื้นบ้านต่อการใช้ประโยชน์ในตำบลท่างิ้ว อำเภอเมือง จังหวัดนครศรีธรรมราช โดยเพื่อมีวัตถุประสงค์เพื่อศึกษาความหลากหลายของผักพื้นบ้านในตำบลท่างิ้ว อำเภอเมือง จังหวัดนครศรีธรรมราช ของคนในชุมชน ทั้งนี้จากการศึกษาผักพื้นบ้านของคนในชุมชน จำนวน 16 ครัวเรือน พบว่าผักพื้นบ้านที่ได้ศึกษา จำนวน 40 ชนิด โดยใช้แบบสำรวจผักพื้นบ้านตำบลท่างิ้ว อำเภอเมือง จังหวัดนครศรีธรรมราช โดยชื่อผักดังนี้ กะเพรา ขมิ้นชัน ข่า ฟักเขียว ฟักทอง ผักเหลียง ดอกแค ฉิ่ง ชะมวง ผักชีล้อม ชุมเห็ดเทศ ดีปลี พริกขี้หนู ตะไคร้ ตำลึง ถั่วฝักยาว เถาคันแดง ทองหลาง กระทือ สะเดาเทียม ลูกเนียง บอน บัวบก บุกคางคก ผักกระเฉด ผักกาดนกเขา ผักกูด ผักโขม ผักบุ้ง ผักริ้น ผักเสี้ยน ผักหนาม
การศึกษาการใช้ประโยชน์ของผักพื้นบ้านของคนในชุมตำบลท่างิ้ว อำเภอเมือง จังหวัดนครศรีธรรมราชเป็นผักพื้นบ้านโดยได้จำแนกออกเป็น 4 กลุ่มดังนี้
กลุ่มที่ 1 ประเภทเป็นผักเหนาะและเป็นยา (กินสด ลวก ดอง) จำนวน 10 ชนิดได้แก่ ฉิ่ง ผักชีล้อม ถั่วฝักยาว ทองหลาง สะเดาเทียม ลูกเนียง บัวบก กระทือ ผักกระเฉด ผักกาดนกเขา ผักเสี้ยน
กลุ่มที่ 2 เป็นผักพื้นบ้าน ประเภทใช้ปรุงอาหาร (ต้ม แกง ผัด) จำนวน 17 ชนิดได้แก่ กะเพรา ฟักเขียว ฟักทอง ผักเหลียง ดอกแค ตำลึง เถาคันแดง บอน ผักกูด ผักโขม ผักบุ้ง บุกคางคก ผักริ้นผักหนาม ลำเท็ง ผักหวานบ้าน บวบหอม
กลุ่มที่ 3 เป็นผักพื้นบ้าน ประเภทใช้ปรุงอาหารอย่างเดียว (เป็นผักเหนาะไม่ได้) จำนวน 10 ชนิดได้แก่ ขมิ้นชัน ข่า ชะมวง พริกขี้หนู ตะไคร้ ส้มแขก ยี่หร่า มะนาว พริกไทยและมะกรูด
กลุ่มที่ 4 เป็นผักพื้นบ้าน ประเภทเป็นยาอย่างเดียว จำนวน 2 ชนิด ได้แก่ ชุมเห็ดเทศ ดีปลี





ข้อเสนอแนะ
1. ควรส่งเสริมแนวทางเกษตรกรสามารถปลูกผักพื้นบ้านเพื่อมีความมั่นคงทางด้านอาหาร
2. สร้างพฤติกรรมของมนุษย์ให้ได้ตระหนักในจิตสำนึกต่อการดูแลพืชผักพื้นบ้านที่มีอยู่ภายในครัวเรือนและภายในชุมชนไว้
3. ควรมีการเปิดโอกาสให้มีการถ่ายทอดความรู้ และประสบการณ์เกี่ยวกับผักพื้นบ้านให้ผู้ที่สนใจเพื่อเป็นแนวทางในการปลูกผักพื้นบ้าน และบริโภคผักพื้นบ้าน
4. การศึกษาวิจัยครั้งนี้เป็นเพียงขั้นต้นได้ข้อมูลหรือผลจากการศึกษาวิจัยในระดับหนึ่งเฉพาะที่ จึงควรมีการต่อยอดในการศึกษาให้หลายประเด็นและกว้างในหลายมิติ
