บทคัดย่อ
ข้าวสังข์หยดเป็นข้าวเจ้าพันธุ์พื้นเมืองของจังหวัดพัทลุง มีเยื่อหุ้มเมล็ดสีแดง ซึ่งเป็นสารสี ในกลุ่มของแอนโทไซยานิน จึงมีประโยชน์ในการชะลอความแก่ และบำรุงโลหิต บำรุงร่างกายให้แข็งแรง และป้องกันโรคความจำเสื่อม งานวิจัยนี้จึงเปรียบเทียบลักษณะทางสัณฐานวิทยาและค่าการดูดกลืนแสงในเมล็ดข้าว สังข์หยดที่ปลูกในพื้นที่ต่างกันเพื่อเป็นข้อมูลสำหรับผู้บริโภคในการเลือกซื้อข้าวสังข์หยดจากแหล่งต่างๆและเพื่อเป็นข้อมูลสำหรับการหาปริมาณแอนโทไซยานินต่อไปในอนาคต
โดยจะศึกษาลักษณะทางสัณฐานวิทยาและค่าดูกลืนแสงของข้าวสังข์หยดใน 2 จังหวัด 5 พื้นที่ ได้แก่ จังหวัดพัทลุง ในอำเภอควนขนุน อำเภอป่าพะยอม และอำเภอเขาชัยสน จังหวัดนครศรีธรรมราช ในตำบลบางสะพานและศูนย์วิจัยข้าวนครศรีธรรมราช โดยการเก็บตัวอย่างข้าวเปลือกจากพื้นที่ที่จะศึกษา นำมา ศึกษาลักษณะทางสัณฐานวิทยาทั้งหมด 4 องค์ประกอบ คือ 1.หาขนาดของเมล็ด 2.รูปร่างของเมล็ด 3.น้ำหนักของเมล็ด 4.เปอร์เซนต์การกระเทาะ และการวัดค่าการดูดกลืนแสงโดยการสกัดแอนโทไซยานิน จากเมล็ดข้าวกล้องและนำมาวัดค่าการดูดกลืนแสงด้วยเครื่อง UV-VIS Spectophotomrter
ผลการทดลองในส่วนของลักษณะทางสัณฐานวิทยา เมล็ดข้าวกล้องที่มีขนาดใกล้เคียงกับขนาดมาตรฐานของข้าวมากที่สุดคือ เมล็ดข้าวจากศูนย์วิจัยข้าวนครศรีธรรมราช และเมล็ดข้าวจากศูนย์วิจัยข้าวนครศรีธรรมราช ยังมีเปอร์เซ็นต์การกะเทาะที่น้อยที่สุดอีกด้วย และในส่วนของค่าการดูดกลืนแสง เมล็ดข้าวจากอำเภอควนขนุนมีค่าการดูดกลืนแสงมากที่สุดและเมล็ดข้าวจากตำบลบางสะพานมีค่าการดูดกลืนแสงน้อยที่น้อยที่สุด
