การศึกษาในครั้งนี้เป็นการศึกษาเชิงพรรณนา ( Descriptive study) มีวัตถุประสงค์เพื่อศึกษาพฤติกรรมการบริโภคผักของนักเรียนประถมศึกษาปีที่ 4 ของโรงเรียนพระหฤทัยนนทบุรี จังหวัดนนทบุรี ประชากร คือ นักเรียนประถมศึกษาปีที่ 4 โรงเรียนพระหฤทัยนนทบุรี จังหวัดนนทบุรี จำนวน 312 คน โดยมีการเก็บรวบรวมข้อมูลด้วยแบบสอบถาม วิเคราะห์ข้อมูลด้วยสถิติเชิงพรรณนา ค่าร้อยละ ค่าเฉลี่ย ค่าเบี่ยงเบนมาตรฐาน และการสัมภาษณ์
ผลการศึกษาพบว่า ด้านความรู้นักเรียนมีความรู้เกี่ยวกับผักว่าผักมีประโยชน์ต่อร่างกายแข็งแรง ร้อยละ 100 รองลงมา คือ ผักจัดอยู่ในอาหาร 5 หมู่ ร้อยละ 95.8 ด้านพฤติกรรมการบริโภคผักพบว่านักเรียนนิยมบริโภคขนมพฤติกรรมในการบริโภคผักของนักเรียนชั้นประถมศึกษาปีที่ 4 โรงเรียนพระหฤทัยนนทบุรี มีระดับของการปฏิบัติเป็นบางครั้งมากที่สุด ในเรื่อง การรับประทานผักบ่อยครั้งแค่ไหน ร้อยละ 66.3 รองลงมาเป็นการรับประทานผักในมื้อกลางวันของวัน ร้อยละ 59.3
