USDA กำหนดว่า คำว่า "organic" จะใช้ได้เฉพาะกับสินค้าเกษตร (รวมถึงสัตว์น้ำที่จับจากแหล่งธรรมชาติและที่มาจากการเพาะเลี้ยง และอาหารสำหรับเลี้ยงปศุสัตว์) ทั้งที่เป็นวัตถุดิบและที่ผ่านกระบวนการแล้ว ทั้งนี้รวมถึงผลิตภัณฑ์เกษตรที่นำมาใช้ในลักษณะที่เป็นเครื่องปรุง (ingredient) ที่ได้รับการผลิตและการจัดการเป็นไปตามกฎระเบียบ USDA ที่กำหนดไว้ว่าแล้วเท่านั้น คือ

1. เนื้อสัตว์ เนื้อสัตว์ปีก และไข่ มาจากสัตว์ที่ไม่ได้ถูกให้ฮอร์โมนช่วยในการเติบโต หรือยาปฏิชีวนะต่างๆ ยกเว้นการให้อาหารเสริมประเภท วิตามิน หรือแร่ธาตุ ได้รับการเลี้ยงดูด้วยอาหารสัตว์ที่เป็น "organic" และอยู่ในสภาพที่สัตว์มีเสรีภาพในการเคลื่อนที่ไปไหนๆ ได้อย่างเป็นอิสระ

3. เป็นธัญพืชที่ได้รับการปลูกบนผืนดินที่ไม่มีการใส่ปุ๋ยเคมี หรือปุ๋ยที่เป็นมูลสัตว์ การรักษาสภาพของดินกระทำโดยการเปลี่ยนชนิดของธัญพืชที่ปลูก ปลูกพืชคลุมดิน หรือการใช้ปุ๋ยที่มาจากพืชและสัตว์

6. การกำจัดวัชพืชกระทำได้ด้วยวิธีการพรวนดิน ใช้มือเก็บ ใช้เครื่องมือ หรือการคลุมดิน และไม่ใช้สารเคมี

7. ไม่มีการผสมสาร sulfites, nitrate หรือ nitrite ในระหว่างกระบวนการผลิตหรือจัดการ ทั้งนี้ยกเว้นไวน์ที่มีการผสม sulfites อาจจะระบุบนฉลากได้ว่า "made with organic grapes"
