ปัจจุบันในประเทศไทยมีผลิตภัณฑ์แปรรูปจากผลไม้หลายชนิด เช่น ทุเรียนกวน กล้วยฉาบ ลำใยอบแห้ง น้ำผลไม้ ไวน์ผลไม้ การผลิตไวน์ผลไม้เป็นที่นิยมโดยใช้ผลไม้ชนิดที่มีคุณสมบัติและรสชาติที่เหมาะสมเป็นวัตถุดิบในการผลิตไวน์
งานวิจัยนี้จึงทำการศึกษาคุณสมบัติของไวน์ผลไม้โดยเลือกผลไม้หาง่ายราคาถูกมีวางขายอยู่ตามท้องตลาด 3 ชนิด ได้แก่ สับปะรด องุ่น ส้ม นำมาผลิตไวน์ โดยใช้ ยีสต์ขนมปัง (Saccharomyces Cerevisias) ไวน์เป็นเครื่องดื่มแอลกอฮอล์ที่ได้จากการหมักน้ำผลไม้ด้วยยีสต์ไว้ 7 วัน-1 เดือน โดยยีสต์เปลี่ยนน้ำตาลในผลไม้ให้เป็นแอลกอฮอล์ และทำการวิเคราะห์ติดตามคุณภาพของไวน์จากปริมาณน้ำตาลและแอลกอฮอล์ในไวน์ผลไม้ ด้วยเครื่องวัดปริมาณน้ำตาล และ เครื่องวัดปริมาณแอลกอฮอล์ (Refractometer ) เป็นระยะเวลาเวลา 1 เดือน ตรวจวัดและบันทึกปริมาณน้ำตาลและแอลกอฮอล์ของไวน์ผลไม้ทั้ง 3 ชนิด ทุกวัน นำผลที่ได้มาวิเคราะห์ทางสถิติโดยใช้โปรแกรม SPSS (one-way ANOVA) จากการวิเคราะห์ปริมาณน้ำตาล (%Birx) ในไวน์ผลไม้ 3 ชนิด พบว่ามีปริมาณน้ำตาลแตกต่างกันอย่างมีนัยสำคัญทางสถิติ (p=0.009) ได้ผลดังนี้ ไวน์องุ่นมีค่าเฉลี่ย 2.17 % ไวน์ส้มมีค่าเฉลี่ย 2.24 % ไวน์สับปะรด มีค่าเฉลี่ย 2.34 % ตามลำดับ ผลจากการทดสอบปริมาณแอลกอฮอล์ในไวน์จำนวน 3 ชนิด พบว่ามีปริมาณแอลกอฮอล์ไม่แตกต่างกันอย่างมีนัยสำคัญทางสถิติที (p=0.05) ได้ผลดังนี้ ไวน์ส้มมีค่าเฉลี่ย 5.08 ดีกรี ไวน์สับปะรด มีค่าเฉลี่ย 5.53 ดีกรี ไวน์องุ่นมีค่าเฉลี่ย 4.90 ดีกรี ตามลำดับ
