จากบ่อเลี้ยง หมู่บ้านมาบบัว อำเภอระโนด จังหวัดสงขลา ระหว่างวันที่ 18 – 19 ตุลาคม พ.ศ. 2556
และศึกษาการยอมรับด้านลักษณะปรากฏ สี กลิ่น รสชาติ เนื้อสัมผัส และความชอบของสาหร่ายผมนางที่อัตราส่วนที่แตกต่างกันของสาหร่าย 4 ระดับ คือ 10, 20, 30 และ 40 กรัม
โดยใช้ผู้ทดสอบจำนวน 30 คน ด้วยวิธีการชิมและให้คะแนนความชอบ 9 ระดับ (9 – Point Hedonic Scale)
เพื่อหาอัตราส่วนของสาหร่ายเหมาะสมต่อการผลิตเยลลี่
พบว่าสาหร่ายผมนาง ประกอบด้วย ความชื้น โปรตีน ไขมัน เถ้า และเยื่อใย ดังนี้ (5.24 ± 0.02, 14.62 ± 0.58, 0.06 ± 0.02, 5.16 ± 0.01 และ 74.98 ± 0.56 ตามลำดับ)
สำหรับการยอมรับของเยลลี่จากสาหร่ายผมนาง
พบว่าสูตรที่ 4 ได้รับคะแนนรวมจากทุกด้านสูงที่สุด
โดยรับคะแนนการยอมรับด้านลักษณะปรากฏ สี รสชาติ เนื้อสัมผัส และความชอบสูงที่สุด (7.44 ± 1.54, 7.23 ± 0.97, 7.16 ± 1.34, 7.06 ± 1.01 และ 7.27 ± 1.27 ตามลำดับ)
ยกเว้นด้านกลิ่น แต่ไม่มีความแตกต่างกันทางสถิติ (p > 0.05)
ดังนั้นการผลิตเยลลี่จากสาหร่ายผมนางควรใช้ปริมาณสาหร่าย 40 กรัม ต่อน้ำ 1,000 มิลลิลิตร
