โครงงานเรื่อง การศึกษาน้ำมันปลาจากปลาสวาย ได้จัดทำขึ้นเพื่อสกัดน้ำมันจากปลาสวายและศึกษาปริมาณกรดไขมันในน้ำมันปลาสวาย ซึ่งทางผู้จัดทำโครงงาน ได้ทำการสกัดน้ำมันปลาจากปลาสวายโดยวิธีการอบด้วยเตาอบลมร้อนแล้วนำไปสกัดด้วยสารละลายเฮกเซนจากนั้นนำไปวัดปริมาณน้ำมันที่ได้และปริมาณกรดไขมันไม่อิ่มตัวในน้ำมันปลาสวาย โดยปลาสวายที่นำมาทดลองมี 2 รูปแบบ คือ ปลาสวายที่เลี้ยง และ ปลาสวายธรรมชาติ ซึ่งผลการทดลองพบว่า ปลาสวายเลี้ยงและปลาสวายธรรมชาติให้ปริมาณน้ำมัน 13 และ 2 มิลลิลิตร ตามลำดับ จากเนื้อปลาบริเวณช่วงท้อง 150 กรัม และเมื่อนำไปทดสอบด้วยไอโอดีนเพื่อวัดปริมาณกรดไขมันไม่อิ่มตัวในน้ำมันปลาพบว่า ปลาสวายธรรมชาติมีกรดไขมันไม่อิ่มตัวมากกว่าปลาสวายเลี้ยง จากปริมาณน้ำมัน 1.5 มิลลิลิตร โบใช้จำนวนหยดไอโอดีน 4 และ 2 หยดตามลำดับ
