หมึก หรือที่นิยมเรียกกันว่า ปลาหมึก

หมึก หรือที่นิยมเรียกกันว่า ปลาหมึก[1] (อังกฤษ: Cuttlefish, Octopus) เป็นสัตว์ทะเลที่ไม่มีกระดูกสันหลัง ที่มีขนาดใหญ่ เคลื่อนที่ได้รวดเร็ว และว่องไว มีหนวดรอบปาก 4-5 คู่ บนหนวดมีปุ่มดูดเรียงเป็นแถว มีหน้าที่จับเหยื่อป้อนเข้าปาก

เป็นสัตว์ที่มีอยู่ในไฟลัมมอลลัสกา ชั้นเซฟาโลพอดซึ่งเป็นชั้นของสัตว์ที่มีลำตัวอ่อนนิ่ม ชั้นย่อย Coleoidea ต่างจากกลุ่มสัตว์ที่ใกล้เคียงกันคือ Nautiloidea ซึ่งมีเปลือกแข็งห่อหุ้มภายนอกร่างกาย แต่หมึกส่วนใหญ่กลับมีกระดูกหรือเปลือกอยู่ภายในเพื่อใช้ประโยชน์ในการเป็นทุ่นหรือพยุงร่างกาย ซึ่งเรียกว่า ลิ้นทะเล ยังมีบางชนิดที่ไม่มีกระดูก แต่มีกระดูกอ่อนทดแทนเพื่อใช้ในการพยุงโครงสร้างร่างกาย

คำว่า Cephalopoda ซึ่งเป็นชื่อชั้นที่ใช้เรียกหมึก มาจากภาษากรีกแปลรวมกันว่า "สัตว์หัว-เท้า" (head-footed animals) เนื่องจากหมึกเป็นสัตว์ที่ไม่มีแขนขา เพียงแต่มีระยางค์ยื่นออกจากจากรอบ ๆ บริเวณปากเรียกว่า หนวด เท่านั้นเอง

หมึกวิวัฒนาการมาจากมอลลัสกา ในปลายยุคแคมเบรียน หรือราว 500 ล้านปีก่อน แต่กระนั้นหมึกและหอยในยุคปัจจุบันนี้ ก็ยังมีระบบทางร่างกายหลายอย่างเหมือนกัน กล่าวคือ ระบบทางเดินอาหาร, ปาก, ฟัน และกล้ามเนื้อแบบแมนเทิล

ปัจจุบัน ได้มีการค้นพบหมึกแล้วว่า 1,000 ชนิด ชนิดที่ใหญ่ที่สุด คือ หมึกมหึมา (Mesonychoteuthis hamiltoni) ซึ่งเป็นหมึกในอันดับหมึกกล้วย อาศัยอยู่ในห้วงน้ำลึกของมหาสมุทรแอตแลนติก อาจยาวได้ถึง 14 เมตร นับเป็นสัตว์ที่ไม่มีกระดูกสันหลังที่ใหญ่ที่สุดในโลกอีกด้วย และเล็กที่สุดมีขนาดไม่เกิน 1 เซนติเมตรด้วยซ้ำ เช่น หมึกในวงศ์ Idiosepiidae เป็นต้น

หมึกมีความสำคัญต่อมนุษย์ในแง่ของการใช้เป็นอาหารมาช้านาน ในแทบทุกวัฒนธรรม หมึกถือเป็นสัตว์ทะเลที่ใช้ปรุงเป็นอาหาร ซึ่งสามารถปรุงสุดได้ทั้งสดและตากแห้ง เช่น ในอาหารไทย เช่น หมึกผัดกะเพรา หรือ หมึกย่าง เป็นต้น นอกจากนี้แล้วยังใช้ทำเป็นอาหารสัตว์ โดยเฉพาะลิ้นทะเล ซึ่งมีแคลเซียมเป็นจำนวนมาก จึงนิยมให้นกหรือสัตว์ปีกกินเพื่อเพิ่มแคลเซียมในร่างกาย

นอกจากนี้แล้ว หมึกยังมักถูกอ้างอิงถึงในวรรณกรรมประเภทต่าง ๆ โดยเฉพาะหมึกยักษ์หรือหมึกที่มีขนาดใหญ่ เช่น โจมตีใส่เรือดำน้ำนอติลุสของกัปตันนีโม ในนวนิยายวิทยาศาสตร์เรื่อง Twenty Thousand Leagues Under the Sea เป็นต้น[2]

สำหรับหมึกที่พบในน่านน้ำไทย ได้แก่ หมึกกระดองลายเสือ (Sepia pharaonis), หมึกกล้วย (Photololigo duvauceli), หมึกหอม (Sepioteuthis lessoniana), หมึกสายราชา (Octopus rex) เป็นต้น เลือดปลาหมึกมีสีเขียว
