การศึกษาในครั้งนี้เป็นการศึกษาเชิงพรรณนา ( Descriptive study) มีวัตถุประสงค์เพื่อศึกษาพฤติกรรมการบริโภคผักของนักเรียนประถมศึกษาปีที่ 4 ของโรงเรียนพระหฤทัยนนทบุรี จังหวัดนนทบุรี ประชากร คือ นักเรียนประถมศึกษาปีที่ 4 โรงเรียนพระหฤทัยนนทบุรี จังหวัดนนทบุรี จำนวน 312 คน โดยมีการเก็บรวบรวมข้อมูลด้วยแบบสอบถามและการสัมภาษณ์ วิเคราะห์ข้อมูลด้วยสถิติเชิงพรรณนา ค่าร้อยละ ค่าเฉลี่ย ค่าเบี่ยงเบนมาตรฐานและการสัมภาษณ์จะใช้ วิธีการวิเคราะห์เนื้อหา (Thematic Analysis) เพื่อนำมาใช้ในการแยกแยะข้อมูล จัดกลุ่มข้อมูล และอภิปรายข้อมูล
ผลการศึกษาพบว่า นักเรียนชั้นประถมศึกษาปีที่ 4 โรงเรียนพระหฤทัยนนทบุรี มีระดับความรู้เกี่ยวกับผักอยู่ในระดับสูงมากที่สุด ร้อยละ 91.3 พฤติกรรมการบริโภคผักนักเรียนมีระดับของการปฏิบัติเป็นบางครั้งมากที่สุด ในเรื่อง การรับประทานผักบ่อยครั้งแค่ไหน ร้อยละ 66.3 รองลงมาเป็นการรับประทานผักในมื้อกลางวันของวัน ร้อยละ 59.3
