บทคัดย่อ
การวิจัยนี้มีวัตถุประสงค์เพื่อลดของเสียที่เกิดขึ้นในกระบวนการผลิตโดนัทขั้นตอนการทอด โดยใช้เครื่องมือ แผนภูมิก้างปลาเข้ามาวิเคราะห์แก้ปัญหาในการลดของเสียในกระบวนการผลิต ซึ่งได้ทำการตรวจสอบสภาพของเสีย รวบรวมข้อมูลของเสียจำนวน 1,355 ชิ้น จากการเก็บข้อมูล ตั้งแต่เดือน มิ.ย. – ก.ย. 2558 จากกระบวนการผลิต แก้ปัญหาโดยการ วางแผน ลงมือทำ ตรวจสอบ และปรับปรุง ได้เลือกแก้ไขปัญหาในส่วนที่มี ของเสียมากที่สุด โดยนำข้อมูลทั้งหมดมาวิเคราะห์โดยใช้แผนภูมิก้างปลา ผลการดำเนินการปรับปรุงลดการเกิดปัญหาของเสีย ผลที่ได้จากการวิจัยสามารถลดของเสียได้ร้อยละ55.57
