ศึกษาองค์ประกอบทางเคมีของสาหร่ายผมนาง จากบ่อเลี้ยง หมู่บ้านมาบบัว อำเภอระโนด จังหวัดสงขลา ซึ่งเก็บรวบรวมระหว่างวันที่ 18 – 19 ตุลาคม พ.ศ. 2556 และศึกษาการยอมรับด้านลักษณะปรากฏ สี กลิ่นรสชาติ เนื้อสัมผัส และความชอบ
โดยเยลลี่มีอัตราส่วนสาหร่ายที่แตกต่างกัน 4 ระดับ คือ 10, 20, 30 และ 40 กรัม
การทดสอบทุกสูตรแต่งกลิ่นด้วยน้ำหวานบลูเบอรี่ โดยควบคุมความหวานที่ 21 องศาบริกซ์เท่ากันทุกสูตร
ใช้ผู้ทดสอบจำนวน 30 คน ด้วยวิธีการชิมและให้คะแนนความชอบ 9 ระดับ (9 – Point Hedonic Scale)
เพื่อหาอัตราส่วนของสาหร่ายเหมาะสมต่อการผลิตเยลลี่
พบว่าสาหร่ายผมนาง ประกอบด้วย ความชื้น โปรตีน ไขมัน เถ้า และเยื่อใย ดังนี้ 5.24 ± 0.02, 14.62 ± 0.58, 0.06 ± 0.02, 5.16 ± 0.01 และ 74.98 ± 0.56 ตามลำดับ
เมื่อทดสอบทางประสาทสัมผัส โดยวิธีการให้คะแนน พบว่าเยลลี่จากสาหร่ายผมนาง สูตรที่ 4 มีคะแนนโดยรวมจากทุกด้านสูงที่สุด คือ 1,275 คะแนน รองลงมาสูตรที่ 3 สูตรที่ 2 และสูตรที่ 1 มีคะแนนดังนี้ 1,266, 1,210 และ 1,155 คะแนน
ผลการศึกษาการยอมรับด้านลักษณะปรากฏ เนื้อสัมผัส สูตรที่ 3, 4 และ 2 มีคะแนนเฉลี่ยกว่าสูตรที่ 1 ส่วนคะแนนเฉลี่ยการยอมรับด้านสี กลิ่น รสชาติ ทั้ง 4 สูตร ไม่มีความแตกต่างทางสถิติ (p > 0.05) แต่สำหรับคะแนนด้านความชอบรวม สูตรที่ 4 มีคะแนนเฉลี่ยสูงที่สุด (7.27 ± 1.27) แต่ไม่แตกต่างจากสูตรที่ 3 (7.20 ± 1.23)
ดังนั้นอัตราส่วนของสาหร่ายที่เหมาะสมต่อการผลิตเยลลี่อยู่ในช่วง 30 - 40 กรัม ต่อน้ำ 1,000 มิลลิลิตร
