ปริมาณการส่งออกขิงของประเทศไทยจะเพิ่มมากขึ้นทุกๆ ปี ดังนั้นในการพัฒนาคุณภาพขิงเพื่อการส่งออกเป็นสิ่งสำคัญ แต่ การพัฒนาก็ยังพบปัญหาที่สำคัญที่ส่งผลกระทบต่อการผลิตขิงของประเทศไทย คือ คุณภาพขิงที่ไม่ได้มาตรฐาน ตามระบบการจัดการคุณภาพ(GAP) ดังนั้น งานวิจัยชิ้นนี้จึงทำขึ้นส่งเสริมและผลักดันให้เกษตรกรผู้เพาะปลูกขิง ตลอดจน ผู้ประกอบการ กลุ่มผลิตภัณฑ์ชุมชน มีการปฏิบัติงานเพื่อผลิตขิง และตามระบบการจัดการคุณภาพ(GAP) และยังเป็นการเพิ่มช่องทางและรายได้ในเศรษฐกิจการศึกษาการฆ่าเชื้อในถุงบรรจุรีทอร์ตเพาซ์ เพื่อควบคุมในเรื่องของความปลอดภัยของผู้บริโภค เช่น การตรวจวัดจุลินทรีย์ การทดสอบความพึงพอใจทางด้านประสาทสัมผัสของผู้บริโภค
และหาอุณหภูมิที่เหมาะสมสำหรับการฆ่าเชื้อ
