ปริญญานิพนธ์ฉบับนี้ มีวัตถุประสงค์เพื่อเพิ่มประสิทธิภาพกระบวนการผลิตปลาทะเล แช่แข็ง โดยศึกษาการผลิตผลิตภัณฑ์ปลาวัวขาวขนาด 201-300 กรัมและขนาด 301-500 กรัมที่ทำมาจากวัตถุปลาวัวดำทะเลขนาด 401-700 กรัมที่เลือกศึกษาขนาดดังกล่าวเพราะว่ามีการผลิตมากที่สุดและมีราคาขายต่อหน่วยมากที่สุด โครงงานนี้มีแนวทางการแก้ปัญหา คือ ออกแบบผังโรงงานใหม่ เปลี่ยนวิธีการทำงานของพนักงาน และสร้างอุปกรณ์ช่วยในการขนย้าย โดยใช้ทฤษฎีการควบคุมคุณภาพ ทฤษฎีการศึกษาการทำงาน และทฤษฎีการออกแบบอุปกรณ์สำหรับงานยืนทำ เพื่อค้นหาสาเหตุและแก้ไขปัญหาที่เกิดขึ้นในกระบวนการผลิต
