โครงงาน “ วุ้นใสวัยแจ๋ว ” ได้จัดทำขึ้นโดยมีวัตถุประสงค์ เพื่อศึกษาเชิงปฏิบัติในการทำขนมวุ้นโดยมีขั้นตอนการศึกษาดังนี้
1. ร่วมกลุ่มกันทำโครงงาน
2. วางแผนการทำงาน
3. ศึกษาเอกสารที่เกี่ยวกับการทำโครงงาน
4. ดำเนินงานตามเป้าหมาย

โครงงานการทำวุ้นนี้ ได้จัดทำขึ้นเพื่อศึกษาถึงวิธีการทำขนมวุ้น เป็นการศึกษาเชิงปฏิบัติ ทำให้สามารถทำได้จริง ซึ่งได้นำเสนอวิธีการทำขนมวุ้นในแบบต่างๆ ซึ่งคณะผู้จัดทำหวังว่าคงเป็นประโยชน์ต่อผู้สนใจไม่มากก็น้อย

ความเป็นมาและความสำคัญของโครงงาน

ที่มาและความสำคัญของโครงงาน

ผงวุ้น เป็นผงวุ้นสำเร็จรูป มีลักษณะเป็นผงละเอียด สีขาว มีชื่อภาษาอังกฤษว่า BEST QUALITY AGAR-AGAR POWDER ผลิตขึ้นใช้ในประเทศไทย มีตราต่าง ๆ มากมาย เช่น ตรานางกวัก ตราโบว์ ตราโทรศัพท์ ตราตาชั่ง เป็นต้น วุ้นถูกบรรจุเป็นซอง ๆ ขนาดน้ำหนักประมาณ 25-50 กรัมต่อซอง ที่ซองจะมีคำอธิบายวิธีการทำให้ทราบ และจะมีปริมาณสารอาหารให้ทราบว่าสารอาหารที่ได้จากวุ้น แต่ส่วนใหญ่สารอาหารที่ได้จากวุ้นจะน้อย ไม่มีไขมันและโปรตีน เหมาะสำหรับใช้ทำขนมวุ้น เป็นอาหารว่างสำหรับคนทั่วไปและดีสำหรับคนที่ไม่ต้องการอ้วน
ดังนั้น คณะผู้จัดทำจึงสนใจที่จะศึกษาการทำขนมวุ้น โดยการศึกษาจาก เอกสาร การสัมภาษณ์ และทดลองปฏิบัติจริง


วัตถุประสงค์ในการทำโครงงาน
1. เพื่อศึกษาวิธีการทำขนมวุ้น
2. เพื่อปฏิบัติจริงในการทำขนมวุ้น

ขอบเขตการศึกษา
1. ศึกษาโดยใช้ผงวุ้นตราโบว์เท่านั้น
2. ศึกษาจากเอกสาร สัมภาษณ์ผู้รู้และได้ปฏิบัติจริงโดยคณะผู้จัดทำ

ประโยชน์ที่คาดว่าจะได้รับ
1. ทำให้ทราบวิธีการทำขนมวุ้นในแบบต่าง ๆ
2. ทำให้สามารถทำขนมวุ้นรับประทานเองได้
3. สามารถนำไปทำเป็นอาชีพเสริมได้

วิธีทำขนมวุ้น
การทำขนมวุ้นโดยนำผงวุ้นตราโบว์ขนาด 25 กรัม 1 ถุง ผสมกับน้ำประมาณ 3 กิโลกรัม ต้มให้เดือด เมื่อผงวุ้นละลายแล้วใส่น้ำตาลชิมตามชอบ เมื่อเคี่ยวเสร็จแยกน้ำวุ้นใส่หลาย ภาชนะ เพื่อจะได้วุ้นหลายรส เมื่อต้องการรสใดก็นำส่วนผสมมาเคี่ยวผสมกับวุ้น เช่น รสกาแฟ ไมโล ไข่ แล้วตักใส่แบบพิมพ์รูปต่างๆ ตามต้องการ รอประมาณ 2-3 ชั่วโมง วุ้นจะแข็งสามารถแกะออกจากแบบได้

การทำโครงงานเรื่องการทำขนมวุ้นทำให้สมาชิกกลุ่มได้เรียนรู้ถึงการทำขนมวุ้นแบบต่าง ๆ ที่มีรสต่าง ๆ กันโดยมีหลักการคือ ใช้ผงวุ้นผสมน้ำต้มให้เดือดแล้วจึงใส่น้ำตาล ใส่รสตามต้องการแล้วตักใส่แบบพิมพ์ ทิ้งไว้ให้เย็นในอุณหภูมิปกติจนกระทั่งวุ้นแข็งตัว แกะออกจากแบบพิมพ์ สามารถรับประทานได้

อภิปรายผลและข้อเสนอแนะ
จากการศึกษาเรื่องการทำขนมวุ้นทำให้คณะผู้จัดทำได้มีโอกาสทำงานเป็นกลุ่ม สมาชิกมีการแบ่งงานกันทำ ช่วยเหลือกัน ทำให้เรียนรู้วิธีการทำขนมวุ้นร่วมกัน ได้ปฏิบัติร่วมกัน รวมทั้งช่วยกันเฉลี่ยค่าใช้จ่ายในการทำขนมวุ้นนี้ ซึ่งเป็นการแบ่งเบาภาระค่าใช้จ่ายของผู้ปกครอง จากผลการปฏิบัติทำขนมวุ้นครั้งนี้ทำให้ทราบว่ามีข้อพึงระวังคือ การทำวุ้นที่ดีต้องกะปริมาณน้ำให้พอดีกับผงวุ้น ซึ่งถ้าใส่น้ำมากไปจะทำให้วุ้นแข็งตัวช้าและไม่ค่อยอยู่ทรง ถ้าน้ำน้อยวุ้นที่ได้จะแข็งมาก การทำวุ้นไข่ ควรใส่ไข่ขณะที่น้ำวุ้นเดือดไม่เช่นนั้นจะทำให้มีกลิ่นคาวมาก การทำวุ้นกาแฟ
