SHRIMP WITH LEMON GRASS / SAMBAL UDANG SERAI (3-4 servings)
What you will need:
½ cup of dried red chilis (soak with water. Until soft and then process into a paste with food processor with a bit of water)
1 lbs large uncooked shrimps (shelled. And deveined)
4 shallots (peeled and thinly sliced)
1 stalk of lemon grass (bruised to release flavor and bend into half)
.1 cup of Petai beans (if available)
2 Roma tomatoes (roughly chopped)
Salt and Sugar to taste
1 cup of boiled water
2 Tbsp. Of grape seeds oil or oil of your choice
Instructions Preheat skillet / wok with oil. Add in shallots and saute until soft. And fragrant
Add in ground chilis and continue to saute for about 1 minute
Add in lemon grass and tomato.Cook for another minute until it smells really good
Add in the Petai (if using) and cook for another 2 minutes or until. Cooked through. Add in the shrimps and cook until shrimps turn color about 1, minute
Add in boiled water and lower down. The heat and let it simmer for 1-2 minutes
Season with salt and sugar. It should taste slightly sweet savory and spicy,,,. Serve immediately.
