การศึกษาวิจัยเรื่อง การประเมินการจัดการภายใต้แนวคิดเศรษฐกิจสร้างสรรค์ของผู้ประกอบการร้านอาหารในอำเภอหัวหิน จังหวัดประจวบคีรีขันธ์ มีวัตถุประสงค์เพื่อ (1) เพื่อศึกษาการประเมินการจัดการภายใต้แนวคิดเศรษฐกิจสร้างสรรค์ของผู้ประกอบการร้านอาหารในอำเภอ หัวหิน จังหวัดประจวบคีรีขันธ์ (2) เพื่อศึกษาข้อมูลของผู้ประกอบการร้านอาหารในหัวหิน การวิจัยครั้งนี้เป็นการวิจัยแบบผสมโดยใช้กระบวนการวิจัยเชิงปริมาณ โดยมีกลุ่มตัวอย่างทั้งหมด 40 ร้าน จากวิธีการเลือกกลุ่มตัวอย่างแบบเจาะจง ด้วย การใช้แบบสอบถามและกระบวนการวิจัยเชิงคุณภาพด้วยเทคนิคการสัมภาษณ์เชิง จากผลการประเมิน พบว่า กลุ่มตัวอย่างให้ความสำคัญในระดับมากกับ การประเมินกระบวนการผลิต และให้ความสำคัญระดับปานกลางกับ การประเมินกระบวนการ การประเมินสภาพแวดล้อม และการประเมินปัจจัยนำเข้า ตามลำดับ จากการสัมภาษณ์เชิงลึกพบว่า ผู้ประกอบการร้านอาหารบางรายนำบ้านพักตากอากาศของตนมาเปิดเป็นร้านอาหารเพื่อสร้างรายได้เพิ่ม บริหารจัดการร้านให้เข้ากับความต้องการของผู้บริโภคเป็นหลัก มีกระบวนการแก้ปัญหาที่เป็นระบบและรวดเร็ว
