บทคัดย่อ
การศึกษาเรื่อง “ น้ำพริกอ่องเพื่อสุขภาพ ” วัตถุประสงค์
1.)เพื่อศึกษาการทำน้ำพริกเบื้องต้นและส่วนประกอบหลักที่นำมาใช้ 2.)เพื่อสืบสานวัฒนธรรมและถ่ายทอดความรู้ต่างๆ กับเยาวชนรุ่นหลังที่มีความสนใจ 3.)เพื่อศึกษาความปลอดภัยเบื้องต้นของวัตถุดิบกันเสียจากสมุนไพรในการดัดแปลงรูปแบบผลิตภัณฑ์ต่างๆออกสู่สังคม
ให้ประโยชน์ต่อสังคมและเยาวชนรุ่นหลังที่มีความสนใจ โดยใช้ประชากรและกลุ่มตัวอย่างเป็นนักเรียนชั้นมัธยมศึกษาปีที่ 2 ภาคเรียนที่ 1 ปีการศึกษา 2557 โรงเรียนสมุทรปราการ เครื่องมือที่ใช้ในการศึกษา ได้แก่ 1) วัตถุดิบที่มีคุณภาพ และอุปกรณ์ในการทำน้ำพริก 2) แบบสอบถามความพึงพอใจในการเข้าร่วมกิจกรรม “ น้ำพริกอ่องเพื่อสุขภาพ ” และสถิติที่ใช้ในการวิเคราะห์ ได้แก่ ค่าร้อยละ ค่าเฉลี่ย และค่าเบี่ยงเบนมาตรฐาน (S.D.)
ผลการศึกษาพบโดยภาพรวมผู้เข้ากิจกรรม “ น้ำพริกอ่องเพื่อสุขภาพ ” มีความเห็นต่อกิจกรรมอยู่ในระดับมาก(x = 7.74, S.D. = 0.742 ) เมื่อพิจารณาเป็นรายข้อจะพบว่า อันดับสูงสุด คือ [การให้บริการ(x = 15.2, S.D.= 1.53 ) ] อันดับรองลงมา คือ [รสชาติของน้ำพริก (X = 8.5 , S.D.= 0.44 ) ] และอันดับต่ำสุด คือ[ความสวยงามในการจัดจาน (X = 4.95, S.D.= 0.48 ) ]
