การวิเคราะห์หาปริมาณธาตุเหล็กและธาตุแคลเซียมที่มีอยู่ในผักสามชนิดซึ่งได้แก่ ใบชะพลู ใบย่านาง และใบขี้เหล็ก โดยใช้วิธีวิเคราะห์ด้วยเครื่อง Atomic Absorption Spectrophotometer (AAS) ผลการวิเคราะห์พบว่าธาตุเหล็กพบในใบชะพลูมากที่สุดคือ 196.1391 รองลงมาใบขี้เหล็กคือ 110.7864 และใบย่านางคือ 92.2074 ตามลำดับ ส่วนการวิเคราะห์หาปริมาณแคลเซียมในผักพบว่า พบแคลเซียมในใบชะพลูมากที่สุดคือ 1327.6309 รองลงมาใบย่านางคือ 1302.2469 และใบขี้เหล็กคือ 1135.6619 ตามลำดับ สรุปได้ว่าในการวิเคราะห์หาธาตุเหล็กและแคลเซียมพบธาตุเหล็กและแคลเซียมในใบชะพลูมากที่สุด
