บทคัดย่อ
ในสภาวะปัจจุบันที่โลกกำลังเปลี่ยนแปลงและดูเหมือนว่าความเปลี่ยนแปลงยิ่งมากขึ้นเท่าไร ก็ยิ่งส่งผลกับมนุษย์มากขึ้นเท่านั้นไม่ว่าจะเป็นอาหาร การบริโภค การผลิต เหล่านี้เกี่ยวข้องกันเป็นวงจรไม่ว่าจะเป็นในเรื่องการผลิต เพราะเมื่อการผลิตหวังผลผลิตที่สูง เทคโนโลยีจึงถูกนำมาใช้ อย่างหลีกเลี่ยงไม่ได้ ที่ชัดเจนและเห็นได้ชัดคือภาคการเกษตรกับสารเคมีก็มักจะมีการใช้สารเคมี กำจัดศตรูพืช ทั้งนี้เพื่อให้พืชผลดูสวยงามผลที่มาคือสารเคมีตกค้างที่จะส่งผลโดยตรงกับผู้บริโภค ปัจจุบันเรื่องสารเคมีตกค้างมีอยู่ในผักสดและผลไม้ที่เราบริโภคเข้าไปเราได้พบว่ามีสารเคมีตกค้าง อยู่ 4 กลุ่มใหญ่ คือ 1. ออร์กาโนฟอสเฟต 2. คาร์บาเมต 3. ไพเรทรอยด์ 4. ออร์กาโนคลอรีน
ในการทดลองตรวจหาสารเคมีในผักสดมี 3 วิธีการ คือ 1. การเตรียมตัวอย่างและการสกัดสาร 2. การระเหยและเตรียมสาร 3. การทดสอบสี
ผลการทดลองตรวจหาสารเคมีในผักแสดงผลโดยการเทียบสี สีม่วงเข้มพบว่ามีสารเคมี ในระดับน้อยกว่า 50 % ถ้าพบเป็นสีม่วงอ่อนจะมีสารเคมีในระดับ 50 - 70 % แต่ถ้าพบว่าเป็นสีเทาจะพบสารเคมีในระดับที่มากกว่า 70 % วิธีการล้างผักมีหลายวิธีเช่น 1. แช่น้ำอุ่นผสมผงฟู 1 ช้อนโต๊ะต่อน้ำ 20 ลิตรจะช่วยลดปริมาณสารพิษตกค้างได้ร้อยละ 90 – 95 2. แช่น้ำส้มสายชู 50 % 1ช้อนโต๊ะต่อน้ำ 20 ลิตร นาน 15 นาที ลดปริมาณสารพิษตกค้างได้ร้อยละ 60 – 84 3. การแช่ในด่างทับทิม 20-30 เกล็ด ในน้ำ 4 ลิตรจะช่วยลดปริมาณสารพิษตกค้างได้ร้อยละ 35 - 43

ที่มาและความสำคัญของโครงงาน

ปัจจุบันมีการส่งเสริมให้ผลิตผักปลอดสารเคมี หลีกเหลี่ยงการใช้ยาฆ่าแมลงเพื่อให้ได้ผลผลิตที่ดีมีคุณภาพ ปลอดภัยต่อผู้บริโภคตลอดจนรักษาสิ่งแวดล้อมซึ่งสารเคมีเป็นอันตรายต่อผู้ผลิตและผู้บริโภค ดังนั้นคณะผู้จัดทำโครงงานจึงได้นำเอา GPO-M Kit หรือชุดตรวจคัดกรองสารเคมีในผัก ผลไม้และธัญพืช (2กลุ่ม) มาใช้เพื่อตรวจหาสารเคมีในผักว่าผักอยู่ในระดับที่มีสารเคมีเท่าใด ระดับ 0-50%, 50-70% , มากกว่า 70%

วัตถุประสงค์ของการศึกษาการทดลอง
1. เพื่อศึกษาและทดลองหาระดับของสารเคมีในผักสด
2. เพื่อลดการใช้สารเคมีในผักสด GPO-M Kit หรือชุดตรวจคัดกรองสารเคมีในผัก ผลไม้และ ธัญพืช (2 กลุ่ม) มาใช้เพื่อตรวจหาสารเคมีในผักว่าผักอยู่ในระดับที่มี
