งานวิจัยนี้ศึกษาการพัฒนาเทคนิคโครมาโตกราฟีในการวิเคราะห์ปริมาณไบโอเจนิค- เอมีนในน้ำปลาที่ผลิตจากปลาน้ำจืด เป็นการคัดเลือกวิธีที่เหมาะสมต่อการวิเคราะห์ปริมาณไบโอเจนิคเอมีน เมื่อได้ทำการวิจัย พบว่า ปริมาณของไบโอเจนิคเอมีนแต่ละชนิดตั้งแต่ช่วง 8 – 12 เดือน ส่วนใหญ่จะมีแนวโน้มที่เพิ่มขึ้นเมื่อมีการหมักน้ำปลาที่นานขึ้น และมีบางชนิดที่มีแนวโน้มที่ลดลง
เนื่องจากในการพัฒนาเทคนิคทาง HPLC จำเป็นต้องมีค่าที่ใช้ตรวจสอบและยืนยันความถูกต้อง (validation) ซึ่งต่างๆ ที่ใช้นั้น ได้แก่ ค่าความเป็นสมการเชิงเส้น (linearity) ที่ดูจากผลของค่า R2 พบว่า อยู่ในช่วง 0.992-0.999, ค่าความไวต่อการเปลี่ยนแปลงความเข้มข้น (Sensitivity) พบว่า อยู่ในช่วง 67.43 – 99.97, ค่าความแม่นยำ (Precision) พบว่า อยู่ในช่วง 1.44 - 18.33, ค่าความเข้มข้นตํ่าสุดที่สามารถวิเคราะห์ได้ (LOD) พบว่า อยู่ในช่วง 0.13 - 11.81, ค่าความเข้มข้นต่ำที่สุดที่สามารถวิเคราะห์ได้ในตัวอย่าง (LOQ) พบว่า อยู่ในช่วง 0.45 – 39.37 และค่าความถูกต้อง (Accuracy) พบว่า อยู่ในช่วง 67.43 – 99.97 ซึ่งจัดว่าอยู่เกณฑ์ที่ดีและสามารถนำมาใช้ในการวิเคราะห์ทาง HPLC ได้
เมื่อได้ศึกษาไบโอเจนิคเอมีนพบว่า สารไบโอเจนิคเอมีนที่ตรวจพบในช่วง 8-12 เดือน ได้แก่ เมทิลเอมีน (698-1005 ppm), ทริปตามีน (23-852 ppm), 2-ฟีนิลเอทิลเอมีน (102-347 ppm), ไทรามีน (0-184 ppm), พุตเทรส-ซีน (36-74 ppm), คาดาวารีน (0-117 ppm), ฮีสตามีน (256-314 ppm), สเปอร์มิดีน (27-33 ppm) และ สเปอร์มีน (0-7 ppm) นอกจากนี้ยัง พบว่า มีองค์ประกอบทางเคมีคือ ความเป็นกรด-ด่าง อยู่ในช่วง 5.66-5.75, ความชื้น อยู่ในช่วง 40.56-38.22 %, ปริมาณเถ้า อยู่ในช่วง 44.38-46.04 %, เกลือโซเดียมคลอไรด์ อยู่ในช่วง 12.22-14.29 % และปริมาณด่างที่ระเหยได้ทั้งหมด (TVB-N) อยู่ในช่วง 1.62-2.13 %
