โครงงานนี้มีจุดประสงค์เพื่อทำการเก็บรักษาผลมะม่วงให้มีสามารถคงความสดและคงรสชาติของมะม่วงเอาไว้ได้โดยการดองเค็มให้เป็นระยะเวลานาน 15 วัน และหลังจากผลการทดลองนั้น สามารถสรุปผลลัพธ์ที่ได้นั้นว่ามะม่วงสามารถรักษาความสดไว้ได้เป็นเวลา 15 วัน โดยที่รสชาตินั้นก็ยังคงความอร่อยไว้
