Ability to hydrolyze lactose β-galactosidase The modified lactose hydrolysates exhibited excellent lactose hydrolysis ability. When 1,000 U of enzyme was added to 100 mL of milk, 92.44% of lactose was hydrolyzed within 24 hours at 60 °C. The enzyme was also able to hydrolyse at low temperatures of 37, 25, and 10 °C.
