วิธีดำเนินการโครงงาน
ในการจัดทำโครงงานวิทยาศาสตร์ ในการทำน้ำสมุนไพรเพื่อสุขภาพโดยใช้ต้นตะไคร้มาแปลงรูปเพื่อทำน้ำตะไคร้เพราะต้นตะไคร้มีสรรพคุณทางยารักษาโรคต่าง ๆ ได้หลายโรค เช่น แก้ท้องอืด ท้องเฟ้อ จุกเสียดและยังมีคุณค่าทางอาหาร เช่น มีวิตามินเอช่วยบำรุงสายตา นอกจากนี้ยังมีแคลเซียม และฟอสฟอรัส ช่วยบำรุงกระดูกและฟัน ช่วยเพิ่มกลิ่นหอมให้กับอาหารอีกด้วย มีวิธีการดำเนินงานดังนี้


ส่วนผสมในการทำเครื่องดื่ม “น้ำตะไคร้”
ต้นตะไคร้ (ใช้ทั้งต้นและใบ) 5 ต้น
น้ำตาลทรายแดง 1 ถ้วย
น้ำสะอาด 1 ถ้วย
เกลือป่น 1/4 ช้อนชา
วิธีการทำเครื่องดื่ม น้ำตะไคร้
เตรียมส่วนผสมข้างต้นให้ครบตามจำนวน
นำตะไคร้ไปล้างน้ำทำความสะอาด แล้วนำมาทุบให้แตก จากนั้นตัดต้นตะไคร้ให้เป็น ท่อนๆ ประมาณ 1 นิ้ว ส่วนใบตะไคร้ ก็ให้สับเป็นท่อนๆ หรือจะหั่นให้ละเอียดก็ได้ แล้วนำใส่หม้อ เติมน้ำสะอาด ลงไปนำขึ้นตั้งบนเตาไฟ
พอน้ำเดือดก็ให้ลดไฟลง แล้วเคี่ยวด้วยไฟอ่อนๆ จนรู้สึกว่าน้ำตะไคร้ ออกมาผสมกับ น้ำสะอาดมากพอแล้ว (วิธีสังเกต ให้ดูที่น้ำจะเห็นว่า น้ำจะมีสีเขียว)
ใส่เกลือป่นลงไป เคี่ยวอีกสักพัก จนเห็นว่าตะไคร้ได้ มีการละลายออกมา ผสมรวมกันกับน้ำ หมดแล้ว ก็ใช้ทัพพี หรือกระชอนตักเอา ต้นตะไคร้ และใบตะไคร้ออก
พอเอาต้นตะไคร้และใบตะไคร้ ออกหมดแล้วก็ เติมน้ำตาลทรายแดง ลงไปเคี่ยวสักพัก พอให้น้ำตาลทรายแดงละลายหมด ก็ให้ยกลงจากเตาไฟ
ดื่มร้อนๆ ก็อร่อยดี หรือหากใครชอบดื่มแบบเย็นๆ ก็เอาน้ำแข็งใส่แก้ว แล้วก็เท น้ำตะไคร้ลงไป คนให้เข้ากัน ยกขึ้นดื่มก็อร่อยดีอีกแบบ
