ประชากร ณ เดือนธันวาคม 2555 รวมทั้งสิ้น 1,200,423 คน เปนชาย 590,446 คน หญิง609,977 คน สําหรับอําเภอที่มประชากรมากที่สุด ไดแก อําเภอเมือง มีจํานวน 26,107 คน รองลงมา ไดแก อําเภอพาน มีจํานวน 123,425 คน และอําเภอแมจันมีจํานวน 9,131 คน สําหรับอําเภอที่มีความหนาแนของประชากรมากที่สุด คือ อําเภอแมสาย 297.98 คน/ตร.กม. รองลงมาไดแกอําเภอเมือง185.93 คน/ตร.กม. และอําเภอเวียงชัย 171.25 คน/ตร.กม
ประชากรในเขตจังหวัดเชียงราย แบ่งออกได้เป็น กลุ่ม คือ
คนไทยพื้นราบ
ประกอบด้วยคนเมือง คนไทย ไทลื้อ ไทเขิน ไทใหญ่ ดังนี้
• คนเมือง เป็นประชากรกลุ่มใหญ่ที่สุดในอดีตเรียกว่า *ไทยยวน*ไทยวนนอกล้านนา*อำเภอเสาไห้ *จังหวัดสระบุรี *ตำบลคูบัว*จังหวัดราชบุรี *บางขุนพรหม ผู้ชายจะมีรูปร่างโปร่งบางกว่าคนไทยภาคกลางเล็กน้อย ผู้หญิงมีรูปร่างผิวพรรณและหน้าตางดงาม มีภาษาพูดแตกต่างไปจากไทยภาคกลางเล็กน้อย มีตัวหนังสือเฉพาะของตนเอง การแต่งกายพื้นเมือง ผู้หญิงนุ่งผ้าซิ่นยาวเกือบถึงตาตุ่ม ใส่เสื้อแขนกระบอก ห่มสไบ เกล้าผมทัดดอกไม้ ชายนิยมนุ่งกางเกงขายาว ใส่เสื้อคอกลมแขนสั้นสีครามเข้ม มีผ้าขาวม้าคาดเอว บ้านเรือนยกใต้ถุนสูง หน้าจั่วหลังคามีไม้ไขว้กันประดับด้วยลวดลาย เรียกว่ากาแล เครื่องดนตรีที่สำคัญได้แก่ เปี๊ยะ สะล้อ ซึง ปี่ แน กลอง นาฏศิลป์พื้นบ้านมีการฟ้อนเมือง ฟ้อนม่าน ฟ้อนเงี้ยว ประเพณีที่สำคัญคล้ายไทยภาคกลาง มีบางส่วนที่แตกต่างกันออกไปเช่นปอยหลวง เรียกขวัญ สืบชะตาเป็นต้น
• ไทลื้อ,ไทเขิน,ไทใหญ่ เป็นกลุ่มชนที่มีถิ่นฐานเดิมอยู่ในที่ราบลุ่มแม่น้ำโขง และทางตอนใต้ของจีน
• ไทลื้อเป็นชนกลุ่มหนึ่งที่อาศัยอยู่ตอนกลางและตอนบนตั้งแต่แขวงไชยบุรี ประเทศลาวขึ้นไป
• ไทยเขิน มีถิ่นฐานเดิมอยู่บริเวณลุ่มแม่น้ำขิ่นในรัฐฉาน จึงได้ชื่อว่าไทขีน ได้เข้ามาอยู่ในจังหวัดเชียงราย ในเขตอำเภอเมือง ฯ อำเภอแม่สาย และอำเภอเชียงแสน

เชียงรายมีประชากรหลายเชื้อชาติ ทั้งชาวไทยพื้นราบ ชาวไทยภูเขา และชาวจีนฮ่อที่อพยพเข้ามาอาศัยอยู่บนดอยสูง แต่ละชนชาติจะมีประเพณี วัฒนธรรม และวิถีชีวิตที่มีเอกลักษณ์ เป็นเสน่ห์ห์อีกอย่างที่ทำให้เชียงรายได้รับความสนใจจากนักท่องเที่ยวทั้งชาวไทยและชาวต่างประเทศ ชาวไทยภูเขา

ชาวลาวอพยพ
หมายถึง คนลาวที่อาศัยอยู่กับญาติพี่น้องตามแนวชายแดนของประเทศไทย เนื่องจากการเปลี่ยนแปลงการปกครองของลาวในปี พ.ศ. 2517 ขณะนี้ทางการของไทยยังไม่อนุญาตให้เดินทางออกนอกเขตจังหวัดที่อยู่อาศัย
ชาวจีน
ชนกลุ่มน้อยซึ่งสืบเชื้อสายจีน ซึ่งโดยส่วนใหญ่แล้วเป็นอดีตทหารพรรคก๊กมินตั๋ง ได้มาตั้งรกรากในพื้นที่ ที่มีความโดดเด่นได้แก่ หมู่บ้านสันติคีรี
