ลำไยถือเป็นพืชเศรษฐกิจที่สำคัญของภาคเหนือ แต่ลำไยมีอายุการเก็บรักษาที่สั้นและเสียง่าย โดยทางโรงงานลำพูน ดีเอส ฟู้ด ซึ่งประกอบกิจการแปรรูปพืชผลทางการเกษตรโดยผลิตลำไยอบแห้ง มีตู้อบจำนวนจำกัด ทำให้ในช่วงที่มีลำไยเข้ามาพร้อมกันเป็นจำนวนมาก ทางโรงงานอบลำไยไม่ทันลำไยสดที่รอก่อนเข้ากระบวนการอบจึงมีน้ำหวานไหลออกมา เมื่อนำไปอบแห้งแล้ว ทำให้ขายได้ในราคาที่ต่ำลง โครงงานวิจัยนี้จึงมีวัตถุประสงค์ เพื่อหาแนวทางในการยืดอายุลำไยสดเพื่อแปรรูปในอุตสาหกรรมลำไยอบแห้ง โดยลำไยหลังผ่านการยืดอายุยังมีคุณภาพที่ยอมรับได้ ซึ่งวิธีการยืดอายุลำไยสดนั้น จะทำโดยการแช่ลำไยในสารละลายทั้งเปลือก งานวิจัยนี้จึงได้ประยุกต์ใช้การออกแบบการทดลองเชิงแฟคทอเรียลเต็มจำนวน 2k เพื่อหาเงื่อนไขที่เหมาะสมที่สุดสำหรับกระบวนการยืดอายุลำไยสด โดยศึกษา 3 ปัจจัยได้แก่ อุณหภูมิ อัตราส่วนลำไยต่อสารละลาย และถุง ทำการทดลองทั้งหมด 4 ซ้ำ เพื่อหาค่าผลตอบที่เหมาะสมที่สุด อันได้แก่ ค่าสีของเนื้อลำไยควรมีค่าน้อยที่สุด ปริมาณของแข็งที่ละลายได้(ความหวาน) ควรมีค่ามากที่สุด และความเป็นกรดด่างมีค่ามากกว่า 5 ขึ้นไป
ผลการวิจัยพบว่าปัจจัยที่มีผลต่อค่าผลตอบสีของเนื้อลำไยอย่างมีนัยสำคัญ ได้แก่ ปัจจัย AB คือ อันตรกิริยาร่วมระหว่างอุณหภูมิกับอัตราส่วนลำไยต่อสารละลาย และปัจจัยที่มีผลต่อผลตอบปริมาณของแข็งที่ละลายได้ (ความหวาน) ได้แก่ ปัจจัย A คือ อุณหภูมิ ,ปัจจัย C คือ ถุง และปัจจัย BC คือ อันตรกิริยาร่วมระหว่างอัตราส่วนลำไยต่อสารละลายและถุง โดยได้สร้างสมการความสัมพันธ์เพื่อมาคำนวณหาเงื่อนไขที่เหมาะสมสำหรับแบบจำลองสุดท้าย จากการประมวลผลด้วยโปรแกรม MNITAB ได้ดังนี้ ผลตอบสีของเนื้อลำไยเท่ากับ 4.5425 และค่าผลตอบของปริมาณของแข็งที่ละลายได้(ความหวาน) เท่ากับ 19.7450 oBrix ซึ่งระดับที่เหมาะสมของแต่ละปัจจัย คือ อุณหภูมิ 5 องศาเซลเซียส อัตราส่วนลำไยต่อสารละลาย 1:1 และ ถุงเคลือบ(Al/PE) เมื่อทำการยืนยันผลการทดลองโดยการทดลองซ้ำและนำผลที่ได้มาหาค่าเฉลี่ยแล้วเปรียบเทียบกับค่าลำไยสดจากงานวิจัยเดิม พบว่าค่าเฉลี่ยในการทดลองยืนยันผลมีค่าใกล้เคียงกับค่าสมการทำนายผล ดังนั้นผลการทดลองนี้สามารถยืดอายุลำไยสดได้ตามเป้าหมาย 7 วัน และทำให้ลำไยหลังกระบวนการยืดอายุมีคุณภาพที่ยอมรับได้
