มะพร้าวสามารถใช้ประโยชน์ได้หลายอย่าง
น้ำมะพร้าว ใช้เป็นเครื่องดื่มเกลือแร่ได้ เนื่องจากอุดมไปด้วยโพแทสเซียม นอกจากนี้ยังมีคุณสมบัติปลอดเชื้อโรค และเป็นสารละลายไอโซโทนิก ซึ่งด้วยเหตุนี้จึงสามารถนำน้ำมะพร้าวไปใช้ฉีดเข้าหลอดเลือดเวน ในผู้ป่วยที่มีอาการขาดน้ำหรือปริมาณเลือดลดผิดปกติได้ น้ำมะพร้าวสามารถนำไปทำ วุ้นมะพร้าว ได้ โดยการเจือกรดอ่อนเล็กน้อยลงในน้ำมะพร้าว

มะพร้าว เป็นพืชที่มีความสำคัญทางเศรษฐกิจพืชหนึ่งของประเทศไทย เนื่องจากคนไทยรู้จักใช้เนื้อมะพร้าวในการบริโภคเป็นอาหารทั้งคาวและหวานในชีวิตประจำวัน
สำนักงานสถิติแห่งชาติได้เคยสำรวจพบว่า ประชากรไทย 1 คน จะบริโภคเนื้อมะพร้าวประมาณปีละ 8,273.2 กรัม หรือประมาณ 18 ผล/คน/ปี ซึ่งปัจจุบันประเทศไทยมีพลเมืองประมาณ 55 ล้านคน จะใช้ผลมะพร้าวประมาณ 990 ล้านผล หรือประมาณ 65% ของผลผลิตทั้งหมด ส่วนที่เหลือประมาณ 35% ของผลผลิตทั้งหมด หรือ 489 ล้านผล ใช้ในรูปของอุตสาหกรรมหรือส่งออกต่อไป
อุตสาหกรรมมะพร้าวสามารถแบ่งได้เป็น 2 กลุ่ม คือ
1. ผลิตภัณฑ์แปรรูปเพื่อการบริโภค เช่น อุตสาหกรรมมะพร้าวแห้งอุตสาหกรรมน้ำมันมะพร้าว อุตสาหกรรมกะทิเข้มข้น อุตสาหกรรมมะพร้าวขูดแห้ง อุตสาหกรรมน้ำตาลมะพร้าว
2. ผลิตภัณฑ์เพื่ออุตสาหกรรมและอุปโภค เช่น อุตสาหกรรมเส้นใยมะพร้าว อุตสาหกรรมแท่งเพาะชำ อุตสาหกรรมเผาถ่านจากกะลามะพร้าว อุตสาหกรรมแปรรูปมะพร้าว
ผลผลิตมะพร้าวแต่ละปีจะมีมูลค่าไม่ต่ำกว่าปีละ 2,700 ล้านบาท คิดแล้วมูลค่ามหาศาล ซึ่งเราไม่ควรที่จะละเลยและ ควรเร่งหาทางในการส่งเสริมและพัฒนามะพร้าวอีกต่อไป
มะพร้าวสามารถขึ้นได้ในทุกจังหวัดทั่วประเทศ แต่ขึ้นได้ดีในดินที่มีสภาพเป็นกลางหรือเป็นกรดเล็กน้อยคือ (pH ระหว่าง 6-7 ) ลักษณะดินร่วน หรือร่วนปนทราย มีการระบายน้ำดี มีฝนตกกระจายสม่ำเสมอแทบทุกเดือน อากาศอบอุ่น หรือค่อนข้างร้อน และมีแสงแดดมาก
ภาคที่มีการปลูกมะพร้าวมากและปลูกเป็นอาชีพ คือ ภาคใต้ ภาคตะวันออก และภาคตะวันตก
พื้นที่ปลูก
ภาคใต้ ได้แก่ ชุมพร สุราษฎร์ธานี นครศรีธรรมราช กระบี่ ตรัง
ภาคกลาง ได้แก่ประจวบคีรีขันธ์ สมุทรสงคราม นครปฐม เพชรบุรี ราชบุรี
ภาคตะวันออก ได้แก่ ชลบุรี จันทบุรี ระยอง ตราด ฉะเชิงเทรา
อุปสรรคในการผลิตมะพร้าวในปัจจุบัน[แก้]
1. ต้นมะพร้าวส่วนใหญ่มีอายุมากและสวนเสื่อมโทรม
2. พันธุ์มะพร้าวต้นสูงเป็นพันธุ์พื้นเมืองที่ให้ผลผลิตต่ำ
3. ปลูกแล้วไม่มีการดูแลรักษา
4. สวนมะพร้าวประเภทต้นสูง ไม่ใช่แหล่งรายได้หลักของเกษตรกร เนื่องจากราคามะพร้าวไม่แน่นอน ราคามะพร้าวแกงเฉลี่ยในปัจจุบันอยู่ที่ 2 บาทต่อผล ต่ำกว่าเป้าหมายที่กรมวิชาการเกษตรตั้งไว้ที่ 4 บาทต่อผล ยกเว้นที่ อำเภอทับสะแก ประจวบคีรีขันธ์ เป็นมะพร้าวผลใหญ่ พื้นที่เหมาะแก่การเพาะปลูก มะพร้าว จึงเป็นรายได้หลักของเกษตรกรในแถบนั้น
5. แม้รัฐบาลให้การคุ้มครองผู้ผลิตมะพร้าวด้วยการตั้งกำแพงภาษี แต่รัฐบาลก็ไม่ยังไม่มีมาตรการที่ชัดเจนเกี่ยวกับเรื่องนี้
6. ขาดข้อมูลภาพรวมอุตสาหกรรม โดยเฉพาะอุตสาหกรรมกะทิที่คาดว่ามีมูลค่าการส่งออกสูง
ปัญหาของผู้ค้ามะพร้าวในไทยในปัจจุบัน[แก้]
1.ภาวะราคามะพร้าวตกต่ำ
2.ผลกระทบจากเกณฑ์ให้เกิดการนำเข้ามะพร้าวจากประเทศอื่น
3.ปริมาณมะพร้าวที่ออกสู่ตลาดในประเทศไทยมีมากเกินความต้องการ

แนวทางการช่วยเหลือผู้ค้ามะพร้าวในไทย[แก้]
1.พัฒนาสวนมะพร้าวเสื่อมโทรม โดยปลูกพืชอื่นทดแทน
2.ส่งเสริมให้มีการปลูกพืชแซมในสวนมะพร้าว เพื่อเพิ่มรายได้แก่เกษตรกร
3.ถ่ายทอดเทคโนโลยีที่ทันสมัยและเหมาะสมแก่เกษตรกร
ความสามารถในการแข่งขันในตลาดมะพร้าวโลก[แก้]
มะพร้าวอ่อน มะพร้าวอ่อนเป็นที่นิยมในตลาดฮ่องกง ไต้หวัน และสิงคโปร์ กอปรกับมีงานวิจัยที่สนับสนุนคุณประโยชน์ของมะพร้าวที่มีมากมายต่อพัฒนาการของเด็ก รวมทั้งมีสารให้ความสดชื่น (สารเหล่านี้มีมากในมะพร้าวอ่อนอายุไม่เกิน 8 เดือน แต่มีอยู่น้อยในมะพร้าวแก่) ทำให้มะพร้าวอ่อนไทยเป็นสินค้าส่งออกที่นิยมแพร่หลาย ตลอดจนใช้เป็นวัตถุดิบในอุตสาหกรรมเครื่องดื่ม
